Apple Squares

These turned out great! I used frozen pears, 1/2 whole wheat with 1/2 all-purpose flour and half the amount of butter with 2 tb. applesauce. Then, sprinkled the top with quick oats instead of more sugar because I'm using these for breakfast in the morning, if they make it that long!

Polenta with Spicy Sausage-Veggie Sauce

We enjoyed this last night! I used a vegetarian sausage and made the polenta for more flavor. This is a quick recipe that you won't feel guilty about!

Baked Oatmeal Squares

A quick, nutritious breakfast! I substituted apple butter for the oil and cinnamon and sprinkled the top with wheat germ before baking. We sprayed with nonfat butter spray when serving and enjoyed these!

Raspberry Almond Coffeecake

Yum! I am eating this for breakfast; a good start to the day! I doubled the recipe and used yogurt in place of sour cream and halved the butter, substituting the other half with butter buds. I also used blueberries, since I didn't have any raspberries on hand...I sprinkled powdered sugar on top.

Whole Wheat, Oatmeal, and Banana Pancakes

Delicious!! I also used applesauce in place of oil, omitted milk powder and used 2 bananas. I added some pecans while on the griddle. YUM!

Fresh Asparagus Risotto

Delicious! I added vegetarian bouillon and poultry seasoning to the water to make this vegetarian. Make sure your broth is flavorful, as it characterizes the risotto. I also added some carrot and zucchini ribbons to the onions, cut down on the wine and used evaporated milk in place of cream. Ended up with a very creamy dish that's fabulous!

Almost No Fat Banana Bread

LOVE it! I added the salt, vanilla, and a small, chopped apple as recommended by others. I also used 1/3 cup of apple butter instead of applesauce then sprinkled the top with my Pampered Chef chocolate hazelnut sprinkles. YUM!

My Thai Chicken Wraps

Very Tasty! Reminds me of a Terriaki dish. I used Morning Star vegetarian chicken strips with spinach and placed in tortilla wraps. This tasted just as good without the peanut sauce, but it is a good addition. I will definitely make this again and try it over rice!

Easy Fruit Cobbler

I made one last night with cherry pie filling but substituted half a packet of butter buds in place of all but 1 TB. of butter to cut down on fat...loved it! Made it again for work with canned peaches and blueberries this morning and it disappeared quickly! Thanks for this easy and fast recipe!

Flourless Peanut Butter Cookies

Yum! I doubled this recipe and made it with my class today for a girl with celiac disease. We shaped it into a big cookie cake and stirred in chocolate chips then "iced" with whip topping. Very rich and delicious...will keep this in my file!

Mediterranean Chik'n and Artichokes

I really enjoyed this dish...it's quick and tasty. But, to not make it so dry we drizzled a little Caesar Italian dressing over our plates to coat lightly. Also, nowhere in the recipe does it say to add the artichoke hearts so I added them at the very end just to heat them up so they wouldn't fall apart. We eat a lot of the chick'n strips...it's best to let them brown before eating. Will definitely make again for those busy evenings!

Potato Chips

Yum! I just made these with my Pampered Chef Ultimate Mandolin! You can sprinkle anything on these things...I used the P.C. southwestern seasoning, a chipotle seasoning and a popcorn seasoning to try out different flavors. I also just used baking spray and they didn't stick to the plate at all. I might try these at one of my shows to demo. the mandolin and seasonings! They definitely satisfied my salt craving!

Restaurant-Style Hashbrown Casserole

I assembled this the night before and used sauteed onions and garlic, substituted reduced fat cream of mushroom and added reduced fat sour cream. Like the others, I cut the butter down and it was not missed.

Banana Muffins II

Wow! This is the best recipe for banana muffins I've found. I halved the recipe and cut down the fat by using low fat margarine and an egg white. Also added a handful of sunflower seeds and oats to the batter then sprinkled wheat germ and raw sugar on top! They all disappeared before supper!

Nannie's Hot Milk Sponge Cake

I cut the amount of sugar, but will add it all the next time I make it. It has a nice spongy consistency. I made it in a bunt pan and served it with cool whip and caramel topping. Would like to use strawberries next time!

The Best Vegetarian Chili in the World

I love this recipe! I made it for a non-vegetarian and she couldn't believe there was no meat. We were so busy talking that I neglected to add chili powder and it still tasted great! Of course, we garnished it w/the powder when I realized what happened. I will definitely be making this again!

Hot Water Pie Crust I

This crust has a crisp, biscuit taste. I substituted 1/4 cup reduced fat butter and only 1/2 cup shortening then doubled the milk. It was easy to work with and stayed together nicely! Will definitely make again.
