Baked Ziti III

Sounds terrific! For a vegetarian option, toss cooked & drained ziti with 2 containers of ricotta cheese, & 2 cups of shredded mozzarella. Pour some of the spaghetti sauce in the bottom of a greased 13x9 pan. Next add 1/2 of the ziti mixture & a layer of cheese--shredded moz, sliced moz or provolone. Finish off the jar of sauce over the top. Repeat layer ending with the 1/2 cup parmesan. Bake 30-45 min. It's a Mr Food recipe that rocks! Awesome!!

Orange Rice Pilaf

This rice was very good! I made some changes as suggested by other reviewers. I added 2 chicken boullion cubes to the water, and 1 T of apricot jam (I would have used orange marmalade if I had it.) I also added some lime zest for more citrus flavor!

Nell's Cabbage Salad

Very good & easy! Also less expensive than the broccoli slaw version. I used 1 bag of coleslaw blend instead of the cabbage. Olive oil is a bit too strong for this salad so I used canola oil. I also browned the ramen in a little of the oil. Finally I added 1 tablespoon of soy sauce to the dressing. Delicious!

Fabulous Beef Tenderloin

Truly fabulous! I was hesitant to try this because it sounded too good to be true. So I picked a different recipe, but was short on time so I made this simple one. It was excellent & I'm so glad I ran out of time!

World's Best Lasagna

Very similar to my own recipe, so I'll just add a few suggestions for those who'd like it tweeked! I add 1/2 cup of Chianti wine to the browned meat, cooking until absorbed. The only other differences is I use brown sugar instead of white, fresh vs. dried basil. Also, I add 1 green pepper, chopped, along with the onion & garlic. The fennel sounds great-will try that addition!

Pistachio Cake III

I made this today. I used "pudding in the mix" cake, too. But I added a heaping teaspoon of baking powder to prevent cake from falling as other reviewers complained about. It turned out beautifully!

Orzo with Parmesan and Basil

What an easy & delicious recipe! Add a little wine with the broth & some saffron in the end with the basil & parmesan to kick it up a notch or two!
