Southwestern Black Bean Stew

My hubby loved this. It's really more like chili than a stew. I cooked it on the stovetop instead of a slow cooker, and used a can of chopped tomatoes instead of paste.

Spinach and Rice (Spanakorizo)

I used one 6 ounce bag of fresh spinach, one-half of an onion and one whole cup of rice, to make a rice dish with spinach, instead of a spinach dish with rice. Add a little additional water and cook for longer to get the rice done. Definately add the lemon juice!

Sesame Crusted Mahi Mahi with Soy Shiso Ginger Butter Sauce

I loved it; my three-year-old loved it; my picky husband thought it was okay. I substituted salmon, and to cut some of the calories, used 2% milk instead of cream and only half the butter. The sauce was a little thin but tasty. The milk started to curdle a little when I added it to the shallot/lemon mixture, but the blender whirled it all together nicely in the end.

Simple Savory Pork Roast

My roast was smaller, and I used a little more rosemary (I have a glut!) and I think it tasted better. I added some onions, potatoes and carrots to the pot as well.

Company Cauliflower

Very simple to make. I thought it might be a bit bland, so I added a dash of nutmeg and a little white pepper. My husband said, (and I quote) "This isn't bad. Don't make it every night, but I'd eat it again. And I normally don't eat cauliflower." There you have it.

Pomegranate Jelly

What a beautiful looking, crystal clear jelly! It has a mild flavor that is hard to place... it's not strawberry, not cherry, not raspberry, not cranberry. I don't know if I followed the recipe correctly, but my jelly didn't gel as much as I would have liked. I would use a little bit more "gel" or less juice the next time. The best way to juice these puppies is an old-fashioned lever style juicer-- the kind you use to juice orange/lemon/lime quarters. (I think they use them at Braum's Ice Cream to make limeades) Peel the pomegranate under water to avoid squirting yourself with the juice, which stains like crazy. The seeds sink and the rind floats. Break off a quarter hunk and put it carefully in the juicer and squish.

Pomegranate Relish

A tasty, savory relish, similar to cranberry sauce, but with an oniony, olive oily tang! Perfect for someone with a pomegranate tree who doesn't know what to do with them all. The pomegranate seeds are a little crunchy, like slightly unpopped popcorn. The best way to juice them (and I've tried EVERYTHING) is one of those old-fashioned orange juicers with the lever-- not the kind you turn the orange onto the cone.
