Grilled Asparagus

My daughter made this recipe tonight, substituting the salt with garlic salt. She, my son & husband loved it. Couldn't be easier to make!

Cheesecake Lemon Bars

A combination of two of my favorites - cheesecake and lemon bars. These are delicious! I added a couple drops of pure lemon extract based on a couple of reviews saying there wasn't enough lemon flavor. They are definitely lemon-y. I made them for the Staff Appreciation Luncheon at the high school today. Hope they enhjoy them as much as I do.

Italian Green Beans

I marinated the green beans in the Italian dressing all day, then cooked them as the recipe directed, using only half the butter called for. Also added some minced garlic. We enjoyed the recipe.

Meatloaf on the Grill

I made this today for our Father's Day gathering, with some simple changes. I used 1 lb. ground pork, 1 lb. ground turkey, 2 lbs. ground chuck. Added diced onion, omitted the mushrooms and made a glaze of ketchup, mustard and brown sugar that I spread on the top. We loved it! So nice to have meatloaf in the summer without heating up the kitchen with the oven on for an hour.

Chicken Enchiladas Suizas

Made several changes, as I was trying to duplicate my daughter's favorite dish at a local Mexican restaurant. I left out the red, green and chipotle peppers. Used diced cooked chicken I had in the freezer. Used all Monterey Jack cheese (no cheddar). For the sauce I used cream cheese and chicken broth, with a little sour cream. I was able to get 14 enchiladas, so I used 2 11x7 pans and doubled the sauce as recommended by others. The dish turned out TERRIFIC and very much like the restaurant dish. Will make again.

Banana Pancakes I

Tried these this morning, as I had a lot of bananas in the freezer begging to be used up. Simple, tasty alternative to regular pancakes. Served them with fried eggs and venison bacon. Yum!

Very easy to make, but not much flavor. I topped them with browned butter and that helped. Would be better with stroganoff or other meat/sauce topping than plain.

Microwave Caramel Popcorn

So super-easy to make and so very delicious. The only thing I can recommend is to make it on a low-humidity day. Mine was slightly sticky as there are storms moving in and the humidity is as high as the temp today.

Tenia's Chilled Pasta Salad

Made this for my son's high school graduation party (tripled the recipe). I wanted a non-mayo based salad because we were having potato salad as well, and found this recipe. I received tons of compliments on it from the kids to the adults. I used red bell pepper instead of green (personal preference and what I had on hand), but that is the only change I made. I could see adding cooked, diced chicken, maybe sliced black olives - the possibilities are endless. Great recipe. Thanks for sharing.

Easy Chicken Casserole

This was a good basic recipe, but lacked flavor. I sauteed onion, celery and carrots, then added it to the mixture along with a can of mushrooms (no fresh on hand). Skipped the cracker topping, since I didn't have those on hand either, so maybe flavor could be enhanced there. Served over rice. Will have to play around with boosting flavor if I make this again.

Beer Butt Chicken

Loved this chicken. Moist, flavorful, EASY! I used only half the called for butter. You should be aware that when adding the melted butter and spices to the can, the beer tends to foam out of the can. To keep flare-ups down, reduce the amount of time I had to spend watching the chicken so it didn't catch fire from the flare-ups and to ease grill clean-up, I put a piece of heavy duty foil under the can holder I have. Worked perfectly. Chicken skin crisped nicely, while remaining uncharred.
