Pumpkin Cake III

Wow. This cake is amazing! I love pumpkin and wanted to make a second cake for my son's bday and this cake got rave reviews. I topped it with cream cheese frosting and it was perfection. I will use it again and again. My only change was to add 4 teaspoons of pumpkin pie spice instead of cinnamon.

Rich Chocolate Frosting

I really enjoyed this frosting but you must love chocolate because it is super chocolaty. My 6 year old said the chocolate was "overpowering.". I used it on top of TOO MUCH CHOCOLATE CAKE, a recipe from AR.

Sam's Famous Carrot Cake

WOW. I was concerned when I baked it because it appeared too dense. I baked it in 2 -9 inch round pans until toothpick came out clean. Be careful when removing it because it is fragile. I frosted it with cream cheese frostin II. It was amazing! I got so many compliments. The cake was moist, chewy with a crunch. I followed the recipe except I added a dash of ginger, nutmeg and cloves. Greatly reccomended, don't be scared when you first see it baked.

Simple Scones

Love this recipe! It's simple and delicious. I have only made the orange cranberry version and it is divine. My only change was to add more orange zest, because I wanted a more intense flavor. A word of caution, I doubled the recipe once and the dough was much harder to work with and the results were not as good as the single batches I made. This is on my list of favorite baked good recipes. Thank you Pam! Edit: you do not need a food processor. I never use mine for this recipe, I grate the butter with a metal grater straight into the bowl, less mess. Again, easy, easy, easy.

Pumpkin Pancakes

Delicious!!! I substituted half the white flour with whole wheat and just added pumpkin pie spice and they came out perfect. I was a little concern they may not cook fully because it's such a thick batter but it cooked through and had a nice golden sear. Will make again.

Fresh Southern Peach Cobbler

Delicious! I followed the recipe exactly and ate it while it was still hot with cool whip. My husband, who is not a dessert eater, loved it. Now, the peaches I used were not ripe, they were pretty hard, it was difficult peel. My fault, I could've waited another day or two. I also sliced the peaches somewhat thick. I believe that the fact that the peaches were not very sweet kept this dish from being cloyingly sweet and because they were thickly cut, did not desintigrate. If my peaches were ripe, I would cut back on the sugar. As to the texture, this is a cobbler not a crisp. I absolutely LOVED the cake part and fresh off the oven, it was crispy. I also used an 8x8 pan, and it was perfect. Great recipe, watch the sugar.

Blueberry Buckle

It was very tasty. I did not want to sub anything but I ended up using buttermilk, insted of regilar milk, because I had it in the fridge. I also substituted 1/2 cup of blueberries with reaspberries. It came out like a coffee cake. I served it warm with vanilla ice cream and whipped cream.

Chunky Marinara Sauce

So simple, so delicious. I used petite cut tomatoes and added fresh oregano and basil at the end. I then used my immersion blender to make it slighty less chunky so that I could use it to make chicken parm sandwiches. It was perfect. I did not add salt because it didnot need it and we're cutting back on it.

Buttered Biscuits

Easy, delicious. The trick to really fluffy biscuits is not to over mix. I grate the stick of butter and mix until it just comes together. I use an ice cream scoop to scoop an even amount of mix into my floured hands and I shape it before placing on cookie sheet, makes 10 good sized biscuits.

Downeast Maine Pumpkin Bread

I made the recipe as is, and it was amazing! The spices were right on point, everyone in the family loved it. I made 2 loaves, and 24 mini muffins. I added chocolate chips to the mini muffins. I made one loaf in a non stick metal container and the other in a glass one. The glass container took another 8 minutes to bake.

Cha Cha's White Chicken Chili

Easy and delicious. I used fresh seeded jalapeños and added corn. I wanted a healthier version so I used fat free, low sodium broth and added the cheese on top of rice that I added after I served it. Will make again. Next time I'll cream some of the beans and corn.

Waffles I

I hate rating on a recipe I made changes on, but here it is. I followed other reviewers recommendations and whipped the egg whites and doubled the sugar, vanilla and cinnamon. I also reduced the oil by half and added a pinch of cloves and a dash of pumpkin spice. The waffles were light and crispy and had a hint of spice. The family loved it, will make again. Thank you for a good recipe. Edit: made it again, this time as is, with a little extra vanilla. It was excellent, fluffy on the inside, crispy on the outside and they freeze so well. I gave it 5 stars, excellent basic waffle.

Cocktail Meatballs

These were so good and my party guests devoured them and asked for more! I wish I had made my own meatballs, I had no time, but that sauce made up for a frozen pre-made product. I had some fresh garlic on hand so I threw in about a teaspoon and 2 tablespoons of a sweet 3 pepper sauce I was serving separately and all I can say is Wow. I also ran out of time and threw the frozen pre-cooked meatballs with sauce on the oven for 20 minutes and voila! Done. Thank you for a delicious recipe.

Terrific Turkey Chili

Delicious and easy to make. The kids loved it and so did hubby. You would never know it was made with low fat turkey. I cut back on the amount of zucchini and then wished I hadn't done so. I also added kidney beans and used medium salsa. I made it with Grandmother's buttermilk corn bread and white rice. The kids cant wait to eat it for lunch. Thanks for the recipe.
