Big Al's K.C. Bar-B-Q Sauce

Reviewed: Apr. 11, 2015
Made it tonight as written and it is delicious. Like others stated, tastes just like Sweet Baby Rays sauce, so you have to like a sweet sauce. Don't skip the liquid smoke or the spices, it would make a difference. Thank you for a great recipe. The amount is a lot by the way. EDIT: 6/12/15 I have now made it twice and used it on ribs and chicken several times. I also cut the sugar the second time because it is so sweet. My family preferred it with the additional sugar because it caramelized better on the grill. I'm ok with the lesser sugar content but I feel that you need to up the spiciness a little.

Delicious. Edit: 11/14: I have made this several times and its always a hit. Light, fluffy and tangy. Only change: no lemon extract. I add extra zest to batter and add zest to glaze.

Sam's Famous Carrot Cake

Reviewed: Apr. 11, 2012
WOW. I was concerned when I baked it because it appeared too dense. I baked it in 2 -9 inch round pans until toothpick came out clean. Be careful when removing it because it is fragile. I frosted it with cream cheese frostin II. It was amazing! I got so many compliments. The cake was moist, chewy with a crunch. I followed the recipe except I added a dash of ginger, nutmeg and cloves. Greatly reccomended, don't be scared when you first see it baked.

Blueberry Buckle

Reviewed: Jul. 1, 2013
It was very tasty. I did not want to sub anything but I ended up using buttermilk, insted of regilar milk, because I had it in the fridge. I also substituted 1/2 cup of blueberries with reaspberries. It came out like a coffee cake. I served it warm with vanilla ice cream and whipped cream.

Simple Scones

Reviewed: Jun. 12, 2012
Love this recipe! It's simple and delicious. I have only made the orange cranberry version and it is divine. My only change was to add more orange zest, because I wanted a more intense flavor. A word of caution, I doubled the recipe once and the dough was much harder to work with and the results were not as good as the single batches I made. This is on my list of favorite baked good recipes. Thank you Pam! Edit: you do not need a food processor. I never use mine for this recipe, I grate the butter with a metal grater straight into the bowl, less mess. Again, easy, easy, easy.

Mom's Best Waffles

I made it before with the recommended changes, then again as is. Loved it as is. Just added a little extra vanilla but it is delicious as is. It's a waffle, it's not supposed to be super flavorful, but it is fluffy on the I side, crispy on the outside.. Thank you for an excellent recipe.

Wings were delicious. My only change was to season the wings after drying them and before adding the flour, and adding powder garlic, onion and black pepper to the flour.I also only placed it the fridge uncovered for half an hour. Super crispy, will make again. Thanks for the recipe.

Fresh Southern Peach Cobbler

Reviewed: Jul. 29, 2012
Delicious! I followed the recipe exactly and ate it while it was still hot with cool whip. My husband, who is not a dessert eater, loved it. Now, the peaches I used were not ripe, they were pretty hard, it was difficult peel. My fault, I could've waited another day or two. I also sliced the peaches somewhat thick. I believe that the fact that the peaches were not very sweet kept this dish from being cloyingly sweet and because they were thickly cut, did not desintigrate. If my peaches were ripe, I would cut back on the sugar. As to the texture, this is a cobbler not a crisp. I absolutely LOVED the cake part and fresh off the oven, it was crispy. I also used an 8x8 pan, and it was perfect. Great recipe, watch the sugar.

Waffles I

Reviewed: Dec. 30, 2013
I hate rating on a recipe I made changes on, but here it is. I followed other reviewers recommendations and whipped the egg whites and doubled the sugar, vanilla and cinnamon. I also reduced the oil by half and added a pinch of cloves and a dash of pumpkin spice. The waffles were light and crispy and had a hint of spice. The family loved it, will make again. Thank you for a good recipe. Edit: made it again, this time as is, with a little extra vanilla. It was excellent, fluffy on the inside, crispy on the outside and they freeze so well. I gave it 5 stars, excellent basic waffle.

Cha Cha's White Chicken Chili

Reviewed: Dec. 22, 2013
Easy and delicious. I used fresh seeded jalapeños and added corn. I wanted a healthier version so I used fat free, low sodium broth and added the cheese on top of rice that I added after I served it. Will make again. Next time I'll cream some of the beans and corn.

Downeast Maine Pumpkin Bread

Reviewed: Nov. 16, 2013
I made the recipe as is, and it was amazing! The spices were right on point, everyone in the family loved it. I made 2 loaves, and 24 mini muffins. I added chocolate chips to the mini muffins. I made one loaf in a non stick metal container and the other in a glass one. The glass container took another 8 minutes to bake.
