Easy Chicken and Corn Chowder

Quick and easy. Will make again. My only substitution was 2 cups of skim milk and 1/2 cup of heavy cream because that's what I had on hand. Not 5 stars because it was a little bland, I added a pinch of cayenne.

Buttered Biscuits

Easy, delicious. The trick to really fluffy biscuits is not to over mix. I grate the stick of butter and mix until it just comes together. I use an ice cream scoop to scoop an even amount of mix into my floured hands and I shape it before placing on cookie sheet, makes 10 good sized biscuits. Edit: I have now successfully added cheeses and herbs and they are even better! My fav is gruyere but I also like a cheddar/parm combo.

Chunky Marinara Sauce

So simple, so delicious. I used petite cut tomatoes and added fresh oregano and basil at the end. I then used my immersion blender to make it slighty less chunky so that I could use it to make chicken parm sandwiches. It was perfect. I did not add salt because it didnot need it and we're cutting back on it.

Blueberry Buckle

It was very tasty. I did not want to sub anything but I ended up using buttermilk, insted of regilar milk, because I had it in the fridge. I also substituted 1/2 cup of blueberries with reaspberries. It came out like a coffee cake. I served it warm with vanilla ice cream and whipped cream.

The Perfect Mai Tai

Loved it! It was not overly sweet and the alcohol was hidden within all the deliciousness. Just be careful, after two of these you may not be able to walk a straight line! My only substitution was the 3rd alcohol which I did not have. I just added half light half dark to make up for it. I also used the organic orange juice from Costco, which tastes just like fresh squeezed juice.

Creole Crab and Corn Chowder

It was delicious, just not 5 stars. After watching the video, I only used half a jalapeño pepper and the rest was bell pepper. I used fresh corn , and it made a difference. I found the flavor to be a little bland, but with a kick. I then added a little extra salt, black pepper, and a dusting of celery salt. Served it with bread.

Fresh Southern Peach Cobbler

Delicious! I followed the recipe exactly and ate it while it was still hot with cool whip. My husband, who is not a dessert eater, loved it. Now, the peaches I used were not ripe, they were pretty hard, it was difficult peel. My fault, I could've waited another day or two. I also sliced the peaches somewhat thick. I believe that the fact that the peaches were not very sweet kept this dish from being cloyingly sweet and because they were thickly cut, did not desintigrate. If my peaches were ripe, I would cut back on the sugar. As to the texture, this is a cobbler not a crisp. I absolutely LOVED the cake part and fresh off the oven, it was crispy. I also used an 8x8 pan, and it was perfect. Great recipe, watch the sugar.

Deep South Fried Chicken

My six year old told me I could do better when he tasted this chicken. I'm giving it 3 stars because the crust was very crispy and stuck very well to the chicken. Having said that, it was VERY bland and that was after I added additional herbs and salt. I also marinated the chicken in buttermilk for about 40 minutes before I fried it. I would add more salt/seasoning to this recipe.

French Toast Casserole

Delicious. Very simple recipe that can be tweaked to taste. I used 3 day old cinnamon raisin bread from Panera bread, threw in a few craisins, added a little orange zest, medium eggs, and used 1% milk. Not soggy, perfectly cooked at 40 minutes. Thank you for the recipe, I'll use it again.

Lemon Orange Cake

I only made the cake and it was very good. My only change is that I added the zest of a lemon and it was still not very lemony. It is also not vey sweet and I paired it with Martha Stewart's Swiss Meringue Buttercream. It was a sturdy cake ( not dense) and it was perfect to use for a ruffle came. The cake got rave reviews at my party.

Simple Scones

Love this recipe! It's simple and delicious. I have only made the orange cranberry version and it is divine. My only change was to add more orange zest, because I wanted a more intense flavor. A word of caution, I doubled the recipe once and the dough was much harder to work with and the results were not as good as the single batches I made. This is on my list of favorite baked good recipes. Thank you Pam! Edit: you do not need a food processor. I never use mine for this recipe, I grate the butter with a metal grater straight into the bowl, less mess. Again, easy, easy, easy.

Spicy Honey-Roasted Chicken

Just ok. I seasoned the chicken with salt and pepper before adding the honey mixture. The mixture Did not burn in the pan. It was not very spicy or sweet, it lacked flavor, I added honey on top at the end.

Sam's Famous Carrot Cake

WOW. I was concerned when I baked it because it appeared too dense. I baked it in 2 -9 inch round pans until toothpick came out clean. Be careful when removing it because it is fragile. I frosted it with cream cheese frostin II. It was amazing! I got so many compliments. The cake was moist, chewy with a crunch. I followed the recipe except I added a dash of ginger, nutmeg and cloves. Greatly reccomended, don't be scared when you first see it baked.
