Mexican Shrimp Cocktail

I read all the comments, and many used frozen shrimp, so I too decided to go that route. Let just say, that I wish I hadn’t! The overall taste was not bad, and the flavors/ingredients did blend well, but it still seem like something was missing. The only thing extra I did was adding some finely chopped cucumber and tomato, and I did add the avocado at the time of serving (everything else as written). I will not make again as is, but with some tweaking, sure. For starters, freshly prepared & cooled shrimp is a definite must for this recipe! Trust me, it was difficult getting past that chewy “frozen shrimp” texture! Cutting the onions back a little, adding cucumber and tomato, and for that ingredient that I thought was missing, maybe just a tad bit of actual bottled cocktail sauce or even just some more ketchup? I will say that the presentation is really nice. I use sundae parfait glasses, layering the avocado/shrimp, and then topping with fresh avocado, lime, and cilantro. Severed with crackers too (another definitely must do!).

Tiramisu Layer Cake

Super moist and super delicious! I decided to make this cake (2nd time now) for my daughter's baby shower because I remembered how good it was the first time. I overdid it with the coffee flavoring this time around. So, I do highly recommend adding more, just be careful. The first time, I doubled it everywhere it was called for except the whipped cream frosting. Turned out fab! This time, I added even more, and I really wished I hadn’t. With me being new to cake decorating, and it being whipped cream frosting that I would be working with, I stabilized with a little unflavored jello, and it did the trick. Held up nicely, and turned out beautiful for this newbie cake decorator. Will definitely continue making this yummy cake, and will keep tweaking until I get that perfect balance of coffee flavoring. A must try for any coffee lover out there, really!!

Luscious Slush Punch

Okay - What in the world was the big deal with this punch - let me tell you - IT IS THE BEST HANDS DOWN!!!!!!!!!!!!! At first I added just 1 1/2 cups sugar thinking it would be plenty. After tasting the second set of ingredients I thought that the full amount of sugar would be just right. I am so glad I followed it to the letter! It was so good and so deliciously slushy! All I can say is..Try it and enjoy!!!!!!!!!!!! 100 STARS FOR THIS ONE!!!!!!!!!!!!

Pumpkin Bread IV

HANDS DOWN THE BEST EVER EVER EVER!!!! Moist and simply fantastic! Perfect for the holidays because it makes so much and it’s a real winner in the gift-giving department! Here’s what I’ve done to it, but again as is, it’s just wonderful! I use 2 cns. (15oz ea.) Pumpkin, 2 t. salt, 2 t. cinnamon, 2 t. nutmeg & 2 t. cloves. Everything else stays the same. To make it even more special, I make a topping for it that consisted of walnuts and sugar, and people often have told me that the topping is the best part too! The topping may be good, but this fantastic bread deserves all the credit!! Try it!! You won’t be sorry you did!!

Grandmother's Buttermilk Cornbread

This recipe is without doubt, the best recipe for cornbread that I've EVER tasted. It was moist and perfect in texture. We like ours just a tad bit sweeter, so I’ll adjust accordingly next time. The flavors blend extremely well, so the only recommendation that I can make to this already PERFECT recipe is make it several hours before. Yummy stuff!! This will definitely replace my current cornbread recipe – thanks a million for sharing this!

Waikiki Cornbread

Flavor more than good, it was EXCELLENT! The only downside, it’s way to crumbly. As others, I used 2 1/4 cups mix, and 1 cup cornmeal. I did decide to refrigerate, and it held together better. Next time, I think I will add even more cornmeal. This recipe needs a little TLC, so only 4 stars…the taste definitely deserves 5!

Four Cheese Macaroni

I'm not sure how to rate this one? The end result (as written) was very dry, not creamy at all, and just not edible in my own opinion. As is, 1 star at best. I looked at this giant dish of Mac & Cheese and I was determined to salvage it. I whipped up a cheese sauce (made with milk, onion & garlic), and mix it in, then returned to re-bake with even more cheese on top! Now I had this Mac & Cheese that was more than edible, it was sinfully delicious! The combination of the cheeses blended very well and it was so rich and yummy. But, there was so much cheese in this recipe how could it not be good! After just a couple of bites, one is truly full. I decided to give it 4 stars. With the added cheese sauce, this was the best, and I mean BEST Mac & Cheese I have ever eaten. This dish should only be made once in a blue moon though because of the health factor.

Broccoli and Cauliflower Casserole

This stuff is the bomb!! I used 3 cups cooked white rice (instant rice), 12 oz ea. of broccoli and cauliflower (we love veggies), some sharp cheddar cheese (grated) in the mix and on top (under the cracker topping), and then everything else to the T. To die for! This is one of the BEST casseroles! My family loves it and I even look forward to making this one!! Thanks for sharing!

Chicken Piccata II

I had asked my daughter what she would like for dinner, and she requested, "Lemon Chicken”. I do have a simple recipe, but I wanted to try something new, so off to allrecipes.com I went. I had to try this one just because of the mixed reviews received, and here’s the skinny on what I think. The breading is the problem! It gets real soggy and is quite gross. If you omit the egg/lemon, and just coat the chicken (which I pounded first) with the flour mixture, then that will take care of that problem. Being that I did have this soggy stuff to deal with, I knew I had to come up with something to salvage the meal. First off, I used a whole cup of a good quality dry white wine (instead of the water), with the 2 teaspoons chicken bouillon, and I used 4 tablespoons of lemon juice, mixing them all together. When the chicken was done simmering in the wine mixture, I removed it and then transferred to a warm platter. I mixed 2 tablespoons of cornstarch with a whole cup of 1% milk (it’s what I had on hand) and slowly added that to the liquid in the pan, cooking until thickened, and then pouring the sauce over the chicken. The presentation was gorgeous and she was in heaven from the first bite, and immediately gave the recipe a 5 star rating. Because of the doctoring I had to do, and changing the sauce altogether, I’m only giving 3 stars, even though it turned out to be 5. (Go figure!) Thanks for sharing all the same!!
