Deep Fried Rattlesnake

I didn't like the options for batter I googled while creating this, so I combined a corn meal batter with a traditional beer batter and came up with this. It was amazing! I'll be using that batter for fish, chicken, and everything else.

Green Chicken Enchilada

This was a good starter recipe. But, a little too bland even for my mild taste buds. So, after shredding the chicken, I mixed in a small can of green chiles and the cheese. Then I rolled the enchiladas with the mix and topped it with the green enchilada sauce and cheese. Don't bother waiting till 5 mins before it's done. That just means your cheese won't be melted completely in most cases and your oven will lose heat because you opened it. It was still very mild, so we will likely be adding some hot sauce to the chicken next time.

Good recipe... But technically, wouldn't this be "Hunter's Pie"? Just a thought. Shepherd's pie is lamb. You know... From the "Shepherd's" flock.

Roast Goose with Port Gravy

The goose was fantastic! I made it for my annual Christmas party and it was utterly demolished. I don't think a pack of coyotes could have left a cleaner set of bones! We made two major changes: First, I put a traditional cornbread stuffing with chopped carrots, celery, and onion in the cavity instead of what they suggested. Second, the gravy didn't turn out very well by out family's gravy standards, so very little of that was consumed. However, a guest discovered that the goose was ABSOLUTELY AWESOME when eaten with a bite of the spinach artichoke dip. Who knew?!?! We will definitely make this again... Just skip the gravy.

Herb-Roasted Game Hens

This was awesome and my hubby LOVED it! (And that says a lot because he is one picky eater). I didn't have lemon pepper on hand, so i took a small lemon, halved it, and used a couple teaspoons worth of juice in the glaze/marinade. Came out AMAZING and really juicy. I also drizzled the herbs and butter on the inside of the cavity, too. I will definitely be doing this again.

Strawberry Jam

One of the easiest recipes for jam/jelly I have seen! In the time it usually took me to prep or cook other recipes, this one was prepped, cooked, canned, processed through a water bath and sitting upside down on the counter to cool! I just started canning and making jellies and jams, but this was uber fast... Even for a noobie! Bonus: It tastes just as good as anything in the store (or better) and has far less ingredients and no preservatives.

Spicy Honey Mustard Pork Roast

I just made this for dinner and my fiance loved it. However, although he loved the spiciness, I am cutting the pepper a little bit next time. It was a little much even for me. What was awesome: added about a cup of water to the pan like many others suggested. When I rotated the loin half way through I dumped the rest of the marinade over the top. Took it out, set aside the roast to rest and made gravy with milk, wondra-flour for sauces and gravy, and a few big scoops of sour cream to take the edge off the spiciness. Turned out amazing and served it with mashed potatoes. Really good but very spicy. If you have weak taste buds, cut the pepper by at least half.
