I just made this for dinner and my fiance loved it. However, although he loved the spiciness, I am cutting the pepper a little bit next time. It was a little much even for me.
What was awesome: added about a cup of water to the pan like many others suggested. When I rotated the loin half way through I dumped the rest of the marinade over the top. Took it out, set aside the roast to rest and made gravy with milk, wondra-flour for sauces and gravy, and a few big scoops of sour cream to take the edge off the spiciness. Turned out amazing and served it with mashed potatoes.
Really good but very spicy. If you have weak taste buds, cut the pepper by at least half.
