I made this using shrimp instead of chicken, but simply because I wanted to add seafood to our weekly menu. I made very little changes to this recipe. I added yellow summer squash along with the zucchini. Next time I may add mushrooms or even broccoli too. I used green onions instead of garlic scapes and added 2 T. minced garlic. While zucchini and yellow squash were cooking, I added fresh ground pepper and a pinch of sea salt. Squeezed a half of lime for its juice towards the end as I added fresh basil and tossed with Feta cheese. This recipe was fresh tasting and filing.... plus ultra healthy. I generally use all organic ingredients, but that is a personal choice. Will make this again soon!
