Almond Wild Rice

Loved this recipe! Used a Wild Rice mix from Costco and currants instead of raisins (because that's what I had). Also, cooked the rice in a rice cooker to make it easy. Add some chicken and it's a meal.

Polynesian Coleslaw

Very tasty... I added some diced up boneless skinless chicken breast and made a meal out of it by adding fruit salad on the side. It didn't quite feed our family of 7, though, even with adding the 4 chicken breasts.

Baked Chicken on Rice

Great taste! I used pork chops instead of chicken, and I did us evaporated milk in place of milk (we didn't have enough). The rice and pork were cooked perfectly at the end of the suggested time.

The best chicken salad I've had yet. The kids didn't care for it much, but they tend to not like so much texture in their food. I did half the mayo and added a little milk to it to cut calories/fat

Tender Onion Baked Chicken

This chicken was wonderful. I used bone-in chicken breasts and covered the dish with foil - set the oven timer to turn on and be done when we got home from church. It was SO easy and SO moist and flavorful! Thank you for this recipe!

Belgium Beef Stew

I had high hopes for this stew. I visited Belgium once and had the best stew I've ever had and hoped this recipe would come close. Not one person in my large family liked it. The one good thing was that the stew beef cooked up VERY tender, which is why we gave it a 2 instead of a 1.

Potato Leek Soup III

Everybody in the house loved the soup. I used fat-free half and half, 3/4 of the butter (will probably half next time) and added some minced garlic to the leeks. We left some potatoes chunky and pureed some. Will definitely add to my personal recipe box.

Grandmother's Buttermilk Cornbread

This was definitely and unanimously the best cornbread I've ever made! I doubled the recipe and put only 1 C of sugar total. I buttered a round stoneware pan and heat it before I poured the batter in. Thank you for this great recipe! Oh, it was perfect with a little honey and butter :)

Holiday Punch I

Made this for Thanksgiving Day with a group of 23 family members. Went over very well, but nothing spectacular. I liked it because it wasn't overly sweet. I dropped in frozen cranberries instead of the marashino cherries, it was definitely a festive looking punch!

Slow Cooker Beef Barley Soup

Absolutely yummy! Everyone in our family from 18months to 20 to 48 loved this. I didn't even have any veggies in it (happened to run out before I made it) and it was great. Will definitely make again, hopefully with some veggies next time!

Millie Pasquinelli's Fried Chicken

This chicken was quite good, but not "great". I did soak it in some chicken broth for awhile before cooking. And as someone suggested, let the first coat of flour set before adding the next. It was very moist and the coating stayed on better than any other recipe I've tried for fried chicken. It just needed something else in the spices, I think.

Spinach and Sweet Corn Mashed Potatoes

We all thought the corn in it was a little weird. I will make this again, but the family decided minus the corn and add a little more seasonings and/or garlic. Overall it was pretty tasty! Even the non-spinach eaters liked it and took seconds. After it was done, I put a little cheese on top and browned it in the oven.

Penne with Chicken and Pesto

This was great! Very easy and yummy. I added some broccoli to the penne the last 4 minutes of cooking. I did also thicken the sauce a little with some cornstarch as one other person recommended.
