A Little Country Pumpkin Cake

Very tasty and moist. It kept very well for a week in the refrigerator. I used fresh pumpkin, substituted half brown sugar and skipped the raisins.

Fried Rice Restaurant Style

Good recipe, needs much more soy sauce. Make sure you use cold rice, it really doesn't work well otherwise. Also, I added celery, carrots, frozen peas, broccoli, onions, garlic and whatever meat is available. Any veggies you like will do.

Delicious, but I had trouble getting them to rise in the time that the recipe calls for. Be prepared to wait or add a bit more yeast.

J.P.'s Big Daddy Biscuits

Oh yeah, awesome every time. Not in the recipe, but judging from the picture, the dough is rolled out and folded and re-rolled a couple of times. This makes them rise to major heights and they split open really easy.

To Die For Blueberry Muffins

Fantastic easy recipe. Great even without the crumb topping, but with it, really great. I made apple cinnamon muffins with one cup of chopped sauteed apples instead of blueberries, changed to brown sugar, and added cinnamon. Also great.

Banana Nut Muffins

I followed the recipe exactly, cooked for 20 minutes and found them heavy and a bit tough, although the flavor is good. You may want to add baking powder to the recipe. I found it odd that a muffin recipe would call for 1/4 tsp of baking soda, like a cookie.
