Oh my - this is delish! I had to leave it in for 5 hours because I was away from home. The loin was melt in your mouth! I did cut slits and slide slices of garlic in instead of laying on top. After removing the meat from the pot I added a couple tablespoons of cornstarch to thicken up the sauce for gravy - my 8yo ate the potatoes with this gravy first! It really is a keeper! Froze the leftovers for reheating later.
