Grilled Chicken with Herbs

Used (mostly) fresh herbs, marinated for 5+ hours, used 6 yr balsamic (less oil/vinegar than called for), and grilled over charcoal. Tender, flavorful, and delicious. Note: used small hunks of meat rather than whole breasts.

Cream Cheese Tart Shells

These actually turned out really nicely- I added some salt and a bit of sugar for flavor... and added a bit of extra flour to change the butter/flour ratio per earlier reviews. Not overly flavorful, but a lovely base for other flavors. Would make again!

Mexican Wedding Cookies

Toasted the almonds first, used all powdered sugar, sifted the sugar and flour, added more vanilla and some salt.. SO good! Also, per some earlier reviews, I did the final sugaring after they cooled- turned out GREAT!

Oatmeal Chocolate Chip Muffins

Dipped Sandwich Cookies

Ugg! So sweet, and not much flavor in these cookies. I usually try to only cook things that have a lot of good reviews, and I should have stuck to that and never tried this recipe! A lot of work for not much in return.

Jam Muffins

I actually really loved these muffins, but I think they were made better with a few changes. I added 1 tsp Vanilla and the Zest from one lemon- this really made for a great flavor! Also, I topped 6 of 12 with turbinado sugar. I stuffed the jam deep inside the batter, and topped with a bit more batter before baking. SO good!

Whole Wheat Muffins

Modified this recipe a bit based on what I had read. Changes: apple sauce in place of oil; added 1 tsp Cinnamon, 1/2 tsp Cloves, All Spice, Nutmeg; added 1 cup Golden Raisins; used all WW flour instead of 1/2 white; dusted with sugar; made with three with Chocolate Chips for the chocolate lover in the house. Whew! That's a lot of changes- I'll update with flavor profile!

Decadent Pumpkin Muffins

I followed this recipe exactly, (two tiny exceptions: I used golden raisins and topped with a bit of cinnamon right before tossing into the oven). The flavor is fantastic! Moist and delicious. My only real complaint is that they didn't rise very much. I was really hoping for muffins that would be spilling out of the pan- instead mine were just slightly domed. Still, the flavor can't be beat. Next time I might adjust the baking powder (or is it soda that effects the rise?) and add some nuts. YUM!

Brown Sugar Meatloaf

Holy-moley this is good! I ate with Curried Spinach Soup and it was such a treat. I did tweak a bit- added worchester sauce to the top and put the sugar/katsup mix on both the bottom and top of the loaf. Also, I had more meat than the recipe called for so I added a bit more of most of the ingredients. Also, I added a mix of fresh and powdered garlic and instead of using powdered ginger I used fresh. Make sure to use the sugar because it really brings out the flavor of all the other ingredients! (I made one without just to test, and it wasn't nearly as good). Oh, almost forgot- I didn't have any bread crumbs so I used crushed Cheerios. Delish!

Curried Spinach Soup

This was such a great and simple soup! It was a snap to make with very few ingredients. I used an immersion blender to mix ingredients. Also, I added all ingredients to one pot (with the exception of the potatoes which I cooked separately). I will definately make this again!

Peach-a-Berry Pie

It was a major hit! I did a bit of guess work with the sugar, (I was short cinnamon so I added the cinn/sugar mix that I have ready for morning toast). I also added a bit of brown sugar to the mix, and used frozen cherries. For stability, I added a bit of corn starch. Delish!

Perfect Berry Shortcakes

These were so easy, and so delicious! My guests gobbled them right up. I tried a second batch the next day with a low fat milk, and they were terrible! Make sure you stick to the ingredient list, no matter how bad they are for you. :)

Smooth and Creamy Peanut Butter Pie

I've made this pie many times, and it's always a hit! I started using crushed Oreos and chocolate sauce as the "crust," and topping with more chocolate sauce. It's so simple and easy to make, and so rich and delicious! I'll keep using this one for many years to come.

Four Spice Crackles
