Vegetarian Chickpea Sandwich Filling

Excellent alternative to the same old tired lunch options. I like that this version has celery. The only change I made was adding about 1/2 tbs more mayo than called for (mine was a bit drier without this) and I used fresh herbs instead of dried dill weed. I only wish I had discovered it sooner!

Mock Tuna Salad

This was good! I get so tired of eating the same stuff for lunch all the time, so it was nice to see a healthy, meatless alternative that was a little different. It was pretty tasty too--I'll definitely be making it again--I made a sandwich out of it with lettuce and tomato.

Easy Lentil Feta Wraps

This was easy to make and delicious! Plus, it was cheap! I did use dried lentils instead of canned, which I just boiled until they were soft. Then I drained them and added them to the frying pan. I also added a bit of salt to my lentils (because they were dried) and about 1 tsp of cumin. I will be making this again!

Spanish Tortilla

This recipe is good, but I have tried about 10 different versions on the Spanish tortilla and most of them do not include ham or bell pepper. They also include more salt and pepper. The other super important thing is that you need to cook the tortilla on medium low heat so the bottom doesn't burn before you flip it. Flip it over with the aid of a plate, platter or another frying pan of equal or larger size. Please don't cook the tortilla over medium heat though, or it will burn. As my Spanish friend who came over to my house and taught me how to make it said: "fuego lento" (low/slow flame) is the key. Along with patience.

Hot and Sour Chinese Eggplant

Super yummy--I always double the sauce when I make it though. My husband and I both eat this all up. It is better with the thin japanese eggplants, rather than regular eggplant. I've made it both ways and can attest to that.

Vegetarian Korma

This was good! I did make a few changes to the spices, but that wasn't a huge deal. Specifically, I added an extra 1/2 tbs. of curry, 1 tbs. masala garam, a pinch of cinnamon, a pinch of cardamom, and about a teaspoon of brown sugar. All of those spices helped balance the overall flavor. Also, I added about 1/2 cup of milk and used coconut milk instead of cream. Delicious!

Squash Casserole I

This was really good! I was looking for something simple that would use the huge amount of summer squash I just bought at the local farmer's market. This turned out great! I did add a whole small vidalia onion though because I tend to like onion so I was pretty sure it would be good. Delicious! Thanks!

Red Lentil Curry

This was pretty good. Not the best lentil curry I've made, but I did like it and my fiance and I both ate it. Plus, we had leftovers, which is good because we are both too busy during the week to spend a long time cooking. I also threw in a diced red bell pepper along with the onion to give it a little more flair.
