Chili Rellenos Casserole

I made it half with green chilies, half with jalapenos. We liked the green chilies much better. They were bigger and less spicy. Hubby likes spicy food, that wasn't his problem, but the canned jalapenos were so small, he felt like the casserole just fell apart. Green Enchilada sauce was yummy on top.

Pork Chops for the Slow Cooker

White Bean Chicken Breast Chili

I cooked the chicken w/onions & spices and then put everything (except the green onions & sour cream) in a crock-pot for a couple of hours. Worked great, but I needed to cut the amount of broth way down, for a doubled recipe 4 cups of broth was plenty. You just won't boil as much off in a crock-pot vs. the stove top.

Creole Red Beans and Rice

We liked it. When making it in a pressure cooker, even 2 quarts was WAY too much water. I don't buy celery often, so I used extra, I wasn't going to use it for anything else. I don't think that made it any better, but I also don't think it didn't make it any worse. :-)

Fabulous Low-Calorie Week

The Garlic Chicken is boring, and the shrimp a bit pricy (which is very similar to another review that I wrote). However, I like the other three meals and I like trying to find only 2 more meals, not 5 from scratch.

5 Dinners in 60 Minutes or Less

I love 3 of the meals here, but I always end up subbing out the salmon (too $$) and the garlic chicken (too boring). But having to only come up with 2 meals instead of 5, not bad. There's usually something in the fridge that needs to get used up anyway.

Easy and Elegant Pork Tenderloin

hubby loved it... rubbed it with some prepared Dijon first, the coated it with the bread crumb mixture. Next time I won't try and turn it over. The bottom doesn't need to be coated. Also, I used a canola oil. Olive oil is expensive, canola is cheaper and doesn't really have a taste, so it's all good.

Cherry Chicken Lettuce Wraps

It's a keeper. It's so hard to get cherries 9 months out of the year, when I made this in March (no cherries), I used regular craisens, 4.5 oz worth, that I proceeded to plump up (water to cover and 90 seconds in the microwave, then drained before added). Out of pure cheapness I used napa cabbage for the lettuce ($1.50 vs. $4 for boston). The cabbage worked, and I'd use it again, but I think the slightly milder tast of the boston would be better.

Lentils And Spinach

It was quite good, made it with bullion and fresh spinach (not baby)--the lentils took much less than 35 mins to cook and become soft.
