Rice with Summer Squash

Guyanese Cookup Rice

Great variation on beans on rice. I had 1/2 a can of coconut milk and cabbage to use up which is how I found this recipe. I'm only one person who is trying to eat more meatless meals, so I made a half recipe (my 1/2 can of coconut milk remember) except I left out the scotch bonnet pepper, the chicken and used the whole can of black-eyed peas for a 1/2 recipe. The coconut milk added that little something extra and the cabbage was just a hint. If you also swapped out chicken broth for veggie broth this would make a yummy vegan dinner.

Collard Greens and Beans

This was my first time with collards (or any time of greens!), and I liked it. I'm not a vegetarian, but I hate bacon, so I used vegetable oil to saute in and bullion in the water to replace the salt. Probably a heresy to anyone who actually knows southern cooking, but I liked it.

Harvest Rice Dish

Not just for Thanksgiving!! I wanted to use up a box of wild rice/white rice with seasonings, that box makes 3 cups of cooked rice. I used that in place of the rice and chicken broth and then used 2/3 amount for the rest of the ingredients. (and omitted the brown sugar) I LOVED it as a meatless main dish for a simple week-day supper. Ate it with a microwaved baked sweet potato.

Mandi's Cheesy Potato Soup

Needed a bit more flavor. I think next time I'll use broth instead of water. Oh, and I made a white sauce w/margarine, flour, and milk, then melted the cheese into it. Then added the potatoe/broth mixture into the white sauce.

Greek Chicken Burgers with Feta

These went over fairly well at my house, and were a great way to eat the ground chicken I had got on sale. (As well as the feta that's been sitting in the fridge.) I bet they would also be good with turkey. I did use and entire cup of bread crumbs though--maybe my mean was unusually watery?

Creamy Chicken and Wild Rice Soup

Love this, and I make it with non-fat milk. I can't imagine it with cream! I toss in a handful of dehydrated carrots with the broth, as well as a handful of dehydrated onions. Today we had celery in the fridge, so I minced two stalks and sauteed them in the butter. YUMMY!!! (I bought 6 boxes of the long grain/wild rice when it was on sale, just so I could make this all winter long!)

Unstuffed Peppers

Hubby loved, it was easy, and it wasn't too bad for you... what more could you ask? I used 3 green peppers and 1lb of sweet Italian sausage instead of the ground beef. I also don't have any instant rice on hand, so I used a cup and a half of cooked rice (and didn't add the water.) Add all that and the pasta sauce in a pan and it's good grub!

Singapore Satay

I didn't thread this on skewers, but instead chopped the meat into bite size pieces before marinating, and then used it as part of a stir fry. This was my first time trying lemon grass, and I loved the taste it gave the marinade. However, it is not very edible on it's own--very very woody. Think of lemon grass like bay leaf, some that adds seasoning, but is never eaten!

Sausage Pasta

Hubby liked it--but we did leave out the spinach. (None on hand) He is not a tomato lover, and this had an acceptable level of tomato for him. I like this as a great "cupboard" meal. I have almost all these ingredients all the time.

Chunky Chicken Noodle Soup

Hubby loved it!! I used only 2 chicken breasts, but they were huge, 1lb total. I also added extra broth, as we are "brothy people". Next time I think I'll keep the broth, veggie, and spice amounts, and halve the chicken and pasta.

Juicy Pork Chops

My husband the carnivore loved it... even though we had to push back dinner and they weren't as "fresh" as they could have been. Also, I freely acknowledge that my stove is on the fritz, but they took quite a bit longer than 4 minutes on each side.

Fried Rice Restaurant Style

I use this recipe for the basic proportions, but what I think really makes it is Oyster Sauce. Last time I made it I added a scant one cup to the whole recipe, and next time I'm going to cut down a bit. Oh, and a block of extra firm tofu cut small turns it into a main dish. (at least at our house)

Fast and Easy Tofu Lo-Mein

Mushroom-Smothered Beef Burgers

yummy, easy comfort food. I made mine even easier when I found pre-formed turkey burger patties on sale. The pre-formed patties, one can of soup, a bit of water, a can of mushrooms, and a splash of worcestershire and dinner was ready in less than 20 minutes. (I served with rice and steamed veggies)

Chicken Tikka Masala

I have never had this in a restaurant, so I don't know how my changes compare with how it "should" taste, but I know it was way yummy. I have almost no tolerance for spicy so I left out the cayenne and used a can of green chilies instead of the jalapeno. (Hubby, who is Mexican, added tabascco to his) I also used coconut milk instead of the cream. Very very yummy.
