Dijon-Tarragon Cream Chicken

At first I didnt understand. Ive never made something with high ratings that went so bad. I read over the other reviews and I see a lot of people have not made this recipe as is. People have made their changes and then rated the recipe 4-5 stars, so I really think this 5 star rating is way off. Way too strong of a mustard taste for me. I tried again with less mustard and garlic and served it over chicken stuffed with prosciutto and smoked gouda. It went better with it but I still dont think its that great. Wont be making it again.

Irresistible Irish Soda Bread

This was good, but it did not taste like traditional Irish soda bread. The traditional verson is denser and drier. There are no eggs either since the bread comes from a time when famine was a huge problem. I am disappointed to say the least.

Pesto Potato Salad

Very good, and is a great way to use up the left over pesto I had. I used red onion as that was what I had on hand. I do think it is missing something, but I haven't quite put my finger on it.

Spinach and Strawberry Salad

Excellent salad. I leave aout the paprika and only add black sesame seeds. Sometimes I serve it with grilled chicken and fresh mozarella, when I want to eat this as a meal. The creamyness and mildness of the fresh mozarella goes wonderfully.

Artichoke Chicken

I made a few changes. I used 1/2 cup lite sour cream and a 1/4 cup of mayo. I also added a handful of baby spinach and topped with panko. I used 2 breasts with the same amount of topping. It turned out really good! I think next time I would cut the chicken into chunks.

Oaxacan Tacos

This recipe is very authentic. I've been to Mexico, this is how I ate them as well. The only difference is that they served tomato and avacado on the side, and I liked adding them to the taco. 5 star rating for being authentic, and bringing back great memories!

Creamed Chipped Beef On Toast

Just like moms, minus the pepper and her beef came out of a bag. TIP: If you find this dish too salty, soak the beef in cold water for about 10 minutes, and drain. Try a piece, if its still too salty, soak in fresh water for 10 more minutes.

Carrot Souffle

I thought that this was way too sweet, and it really wasnt like a souffle. I served it a Christmas dinner and nobody really touched it. I can think of a lot of different ways I would rather eat carrots, so I don't think I will be reaching for this recipe again.

White Chili I

left out the green chiles and used jalapeno, also used fresh cilantro. I used a lot more onion and pureed it with some of the chicken broth, so it was a little bit thicker. Went over well with family.

Coconut Pound Cake

Im on the fence with this one. Its not bad, but its not great. I doubled the amount of coconut extract and flaked coconut, but I think it needs more than that. The first bite has a mild coconut flavor, but after that its less noticeable. If I make this again, I would replace the milk with some sort of coconut milk. I think I would also add some coconut rum.

Pumpkin Bread IV

Came out very good! I had to make a few subs: used 3 1/2 cups of pumpkin as that was what was in the can (Couldnt see saving half a cup!) I used half white sugar, half borwn sugar and omited the cloves (didnt have any) I found that this made a dense, moist bread (exactly what i wanted!1) and It made 2 large loafs. I could see stretching it out to 3, but I like 2 better. Thanks!

Gnocchi Bake

This was a nice change of pace. I made a "garlic bread topping" By toasting some bread, and throwing it in the food proccessor with little bit of melted butter, garlic, parmesan chese, and parsley. Threw it under the broiler at the end, Yum!

Eggplant Parmesan II

I wanted to see if baked eggplant was as good as fried, and I do think it is! The only suggestion I have is to use fresh basil, it makes a huge differnce!

Sweet Corn Tomalito

I used creamed corn, and didnt add the extra water. I also cooked it in the microwave, although I may use the oven next time. It was excellent, and comparable to the sweet corn cake I get at Don Pablos or at Chi Chis. Thanks!

Mocha Sponge Cake

It was light and fluffy, but it was very disappointing and lacked flavor. I replaced the coffee flavored liqueur with more chocolate, and it sure didn’t make a difference. It was very bland, and nobody liked it. My brother wouldn’t even touch it after a bite, and that says something.

Pico de Gallo Chicken Quesadillas

One of my favorite meals. The only differnce is that I use red onion, and add lime juice to my pico. I have also added other things to the pico from time to time, such as fresh diced pineaple. Mango also works!

Tzatziki Sauce

this was so so. Very thin, even after draining the cucmbers and yogurt for an hour. The taste was ok, but no quite what Im looking for. I think next time I will use 1 cucumber, will drain the cucmber and yogurt longer, use more dill, and add a touch of fresh mint.
