Cranberry Gelatin Salad

This was a huge hit at our Thanksgiving dinner. I did not alter the recipe at all. It didn't set as firmly as I would have hoped, but the taste was excellent.

Vegetable Chowder

Love it. I made it with veggie bouillon and only 2 cups of cheese, and it turned out great. I think you could use even less cheese with great results. This is a good recipe for using up all of the odds and ends of vegetables in your refrigerator.

Glazed Meatloaf I

My husband says this is the best meatloaf he's ever had. I used turkey instead of beef and vinegar instead of lemon juice, and it turned out great. Makes great sandwiches, too, as we discovered this afternoon. The glaze is nice and tangy.

Suki's Spinach and Feta Pasta

Good golly, this is an excellent recipe! I made it exactly as written, and the loaves turned out perfectly. Baking is such a hit-or-miss proposition for me, so I'm always thankful when a recipe comes along that works exactly as it should.

Yellow Squash Casserole

This was a big hit with my crew. I doubled the squash and used wheat crackers but followed the recipe exactly otherwise. My husband said it reminded him of his grandmother's country cookin', which is a huge compliment.

Orange-Ginger Tofu Triangles

Yum. This reminds me of a dish that I had in a little cafe on the north shore of Kauai. I would recommend freezing and thawing the tofu first to give it a chewier texture. I also added a few handfuls of fresh broccoli for the last ten minutes of cooking and covered the dish. That was really tasty, and the brocolli came out perfectly tender-crisp. The sauce is excellent, and tastes even better the next day. Thanks for the recipe.

Grandma's Slow Cooker Vegetarian Chili

Classic Greek Spinach

This is amazingly, incredibly wonderful and inexpensive. The only changes I made were reducing the olive oil to 1/4 cup and using veggie bouillion instead of beef. Coupled with eggplant patties and tzatziki, you simply can't go wrong. Or make it a meal in itself. I honestly think I could eat this Greek Spinach recipe every day for the rest of my life and be happy. It is just that good.

Peanut Butter Vegetable Chicken Soup

Holy Moses, this is a good recipe. I left out the chicken and added some crushed red pepper flakes, and it couldn't have been better. I actually fantasized about this soup while I was at work.

This is so much better than a sodium laden canned soup with skimpy, lame veggies. Our central heat is broken, and it warmed us right up. I think I might add more beans next time, but that's just a personal thing. THis recipe is perfect as is.

Lentil Loaf

Yum, this was really good. Following the others' suggestions, I left out the bouillion and the topping and it turned out just right. I also used a garlic-herb soup mix instead of vegetable. My meat-eating boyfriend seemed particularly impressed by this dish, so it will become a staple around here. I think he liked it even more than I did.
