Mouse's Macaroni and Cheese

Very tasty! You definitely can double the amount of pasta called for - there is a TON of sauce. The first time we made it we ate all the pasta and the casserole was still 1/3 full of cheese mixture. The next time we doubled the pasta and it was just right. We used Velveeta and white cheddar (got that instead of American by accident) and we loved the mix. The next time we made it we used only sharp and white cheddar and we definitely didn't enjoy it as much as when it had Velveeta. Four stars because the pasta to sauce ratio is so far off. The flavors are great, though.

Mushroom Blue Cheese Turkey Burgers

Tasty and simple! I cooked mine on the skillet and they turned out great. There's enough meat/mushroom mix to make five burgers if you want. I'll definitely be making these again.

Tater Tot Casserole

Tasty enough solid comfort food. My husband thought it was on the boring side, though, so it could use a little something else. I loved how few pans I needed to use! I also added grated cheese, which helped some. We liked it with ketchup and mustard on the side.

Chicken Cordon Bleu I

Tasty but could be a little more inspired. I butterflied the breasts instead of pounding and it seemed to work okay. I used olive oil to make my bread crumbs stick (and which made the chicken more moist) and didn't change the cook time. Next time I will add more ham. We liked ours with honey mustard on the side.

Hungarian Mushroom Soup

Fabulous soup! I made this as directed (but with low-sodium chicken broth and low-fat sour cream) and it came out very tasty with a very nuanced flavor. This is the type of dish I would serve guests. I used both baby bella and shiitake mushrooms, but I think next time I'll just use baby bella.

Broccoli Rice Casserole

A tasty comfort food, but next time I would add more cheese (regular grated cheddar would be fine). I left out the celery and my husband loved it. Any way I can get him to eat broccoli is a win!

Chicken Wild Rice Soup I

Good, solid soup for fall. The seasoning combination was pleasant but the almonds were not. I will definitely leave them out next time - I did not like the crunch compared to the smoothness of the rest of the soup. I used fat free half-and-half and it turned out fine. I also left out the celery since my husband doesn't like it. He also doesn't like curry powder, but I put it in anyway and he never mentioned it. Win!

Homemade Black Bean Veggie Burgers

Fabulous! Super-easy and very tasty. Mine fell apart when cooked in the oven but I may not have formed them tightly enough. However, it didn't matter because I ended up eating them on a bed of spinach with hot salsa and sour cream. Trust me, that's the way to eat these bean burgers. It was a lovely lunch to pack - black bean burger with salsa in one container and spinach in another. Heat the burger and eat on spinach.

Swiss Chicken Casserole II

I found this to be pretty tasty and quick, but it was also fairly salty. Use low-sodium cream of chicken soup and low-sodium stuffing mix. I also made it in the crock-pot per reviewer's recommendation.

Oatmeal Peanut Butter Cookies III

Lovely cookies! I made them just as the recipe called and they were a hit. You don't even know that the oatmeal is in there! Make sure that the cookies are soft, not crispy - they taste much, much better that way in the sandwiches.

Garlic Chicken

This is my husband's favorite chicken dish. Very quick, juicy, tasty, and cheap. I have not found a person who doesn't like it - even the pickiest of my picky eater friends. Three cheers, five stars.

Spinach Basil Pesto

Very tasty and simple. Freezes well. Note: when you use this pesto in recipes, you may have to use up to 2x the amount called for in the recipe. The spinach mellows the basil flavors so that you can't always taste them when you use the normal amount.

Flourless Peanut Butter Cookies

These were solidly good peanut butter cookies, though not fabulous. HOWEVER, they are fabulous considering the amount of work you have to put into them - almost nothing! One minute of throwing the ingredients together, 10 minutes of baking, done! Two dozen peanut butter cookies. These cookies are tasty enough and amazingly fast/convenient, therefore they will show up in my cooking again and again.

Salmon Chowder

I used three cloves of fresh garlic instead of the powdered, 1/2 tsp of salt, low-sodium chicken broth, and fat free evaporated milk. My picky husband loved it! Leftovers were saved and eaten as tasty lunches at work.

Ultra Creamy Mashed Potatoes

Light, fluffy, and flavorful! I've been trying out mashed potato recipes for a while and this is the first one that my husband has loved. We used it as a topping for shepherd's pie. My changes were minimal. I left out the light cream and substituted with low fat sour cream.

Chicken Florentine Casserole

This was wonderful! It definitely took longer than 25 minutes to prep, but my husband said he liked it better than most Olive Garden dishes! We also enjoyed it reheated the next day for lunch at work. I took some of the edits recommended in the reviews: - Saute spinach and mushrooms and olive oil and 1/3 of the garlic. Place on bottom of dish. - Place half of sauce on top, then raw chicken, then rest of sauce. - Shred bacon on top. - Bake 25 min at 350, remove from oven, top with
