Carrot Pineapple Cake I

This cake was a total hit at work when I brought it for a birthday party. I would totally make this again. I did substitute pecans for the walnuts but otherwise followed the recipe exactly. I've also made cupcakes out of this.

Southern Pimento Cheese

So easy and tasty! I used fat-free cream cheese and left out the salt, otherwise made it just as described in the recipe. The extra spices made it much more interesting than the usual pimento cheese recipes you see out there. I can't wait to try it with jalapeno!

Slow Cooker Chicken Pot Pie Stew

I left out all of the bouillon cubes, the celery salt, and the garlic salt, and it was STILL salty from the undiluted canned soup. Maybe it would be better with low-sodium soup or I'm just sodium-sensitive, I'm not sure which.

Chicken and Biscuit Casserole

We really enjoyed this one! It uses standard ingredients in my kitchen, which makes it very convenient for a weekday evening. My modifications were minor: no celery (didn't have any), added corn, and no basil (just ran out). Wonderful fall/winter comfort food!

Banana Oat Muffins

Wonderful muffins! I followed the directions of some of the reviewers: -half white flour, half wheat flour -half white sugar, have brown sugar -1/2 cup chocolate chips -added cinnamon Just great, these will be awesome for breakfast this week. And super fast!

Wild Rice and Beef Casserole

We weren't expecting this to be anything special, but we were pleasantly surprised! My husband and I both enjoyed this and it was very simple and tasty. We substituted 8 oz of fresh whole mushrooms cubed (not chopped) instead of the water chestnuts and canned mushrooms and cooked them with the ground beef. The cheese is instrumental - don't leave it out. My husband doesn't like curry normally, but he really liked this casserole!

Mother's Ham Casserole

Very tasty! We're big fans. However, I would almost double the solid food vs. the cheesy sauce - the cheese sauce was almost overwhelming. I also added some roughly chopped mushrooms to the ham/onion skillet mix and left out the celery. Thank you for the lovely the recipe!

Peanut Butter Cup Cookies

These were a huge hit with my husband and our friends. I've made them twice now and had to make the following changes to make them work: 1. Freeze the peanut butter cups, don't just refrigerate them, before putting them into the cookies. 2. DO spray the muffin pan - mine stuck terribly when I didn't.

Slow Cooked Apple Peach Sauce

This was very nice, but basically just as a solid applesauce - I could barely taste the peaches, even though they were perfectly ripe and fragrant. I also tried making it with strawberries I froze after picking, which we preferred. I used the same method listed here, just with a cup or so of frozen strawberries added instead of the peaches.

Pasta and Garlic

I used far, far more garlic than called for, and my husband and I both thought it was still pretty bland. I guess we like stronger flavors than some. I'll add more Parmesan and other seasonings next time. Maybe parsley.

Apple Pie Ice Cream

Fabulous in all ways, wouldn't change a thing. I did cook the creams and egg because of the raw egg issue. If you do this, make sure the cooked mixture cools almost to room temp before putting it into the ice cream maker.

Taco Seasoning I

I had a houseful of hungry friends when I realized that I'd bought all the taco ingredients but seasoning! I found this recipe and happened to have everything on hand. It was fast, simple, and nobody noticed that it wasn't the usual stuff. I halved the salt and used cayenne instead of red pepper flakes (didn't have any). It tasted great on both ground beef in the skilled and on the chicken taco filling I made in the crock-pot (I added the seasoning for the last hour of cooking, out of eight). Three tablespoons per lb of meat.

Garlic Bread Fantastique

Simple and different. I left out the sage (didn't have any) and added a bit of basil and parsley. It was a hit with my guests and paired great with both marinara and alfredo.

Mouse's Macaroni and Cheese

Very tasty! You definitely can double the amount of pasta called for - there is a TON of sauce. The first time we made it we ate all the pasta and the casserole was still 1/3 full of cheese mixture. The next time we doubled the pasta and it was just right. We used Velveeta and white cheddar (got that instead of American by accident) and we loved the mix. The next time we made it we used only sharp and white cheddar and we definitely didn't enjoy it as much as when it had Velveeta. Four stars because the pasta to sauce ratio is so far off. The flavors are great, though.
