Eh, what can I say? I really wanted to love this soup like all of the reviewers before me. However, I found it a bit lacking. Looking at the ingredients made me worry that this could be the case, so I made a few changes. I sauteed onion into the roux just before adding the stock and milk. I used a really flavorful cheddar and skipped the processed cheese (too gross) and instead used a nice Danish cheese. Adding the cheese reminded me of making fondue and so I figured a splash of white wine would add some dimension. I guess my attempts at amping up the flavor were feeble at best, but still, I was hoping that it wouldn't need my additions. Basically, it needs some oomph. I think someone before me mentioned bacon, carmelized onions, and red pepper flakes. Those might do the trick!
