Dijon Chicken Salad

Cabbage Roll Casserole

I love this kind of hearty and healthy casserole. I do use brown rice, and I added a can of diced tomatoes this last time that I made it. Enjoying leftover casserole tonight!

Turkey Taco Soup

I really liked this hearty soup, but I skipped all the seasonings except the packet of Taco Seasoning. My husband adds hot sauce to his own bowl of soup, and I prefer mine without many spices. I did use cannellini white beans instead of kidney beans, just because that's what I had on hand.

Baked Oatmeal I

I love this recipe! The only change I made was to use 1/4 cup Sunsweet Lighter Bake oil/butter substitute in place of the 1/2 cup oil. I like the fact that it can be mixed the night before and baked the next morning. This is like a heavy, moist coffee cake, and I ate the entire pan myself in two days.

Grandma Johnson's Scones

I have made these several times for special events and when vacationing with friends. If I made them for myself at home, I would eat them all! They are delicious and my friends all love them. I do prefer to make them into 2 rounds and cut them each into 6 large scones. Don't be surprised if the mixture is very dry and crumbly when mixing in the sour cream and egg. I end up mixing it with my hands to get it all into a ball or 2 rounds. I press sanding sugar into each scone before baking. For a bridal shower, I used a heart shaped cookie cutter to shape each scone into a heart. I usually add dried cranberries to the dough and serve with the Easy Devonshire Cream recipe.
