Thai Pork with Peanut Sauce

Oh Yeah! This is so easy and so-o-o good! I tossed a few dried cranberries into the sauce because I didn't have red pepper and I wanted to 'jazz' up the color of the entree a bit. Left overs? Works in a wrap with a bit of shaved lettuce and diced tomato. Definitely a keeper!

Horseradish Deviled Eggs

These are incredibly delicious! I went overboard with the horseradish, becauase I love it, but 1 tablespoon is quite sufficient. This was a favorite with the guys at our family Christmas party. Quite festive served on a tray adorned with fresh parsley and a few grape tomatoes.

Peanut Butter Cups

I loved these! Did use 1/2 milk chocolate chips and 1/2 semi-sweet chips. Only problem is waiting for them to 'set up' before savoring them!

Wow!Easy and delicious! Make ahead and freeze for that unexpected summer company.Great dinner served on slightly toasted thick slices of french bread with a side of coleslaw.

Chicken Noodle Casserole II

A good way to use that left over chicken! I used 1 teaspoon of dried onion flakes, a small can of corn in place of the peas & carrots (yuck!), added a dash of Frank's Red Hot Sauce for 'zing', Cheddar cheese instead of Jack, and topped all of it off with a small can of French Fried Onions for crunch! Scaled it down to serve 4...made enough for at least 6 ample servings. I think this is a good base for any left over poultry, meat or fish. By the way, using 1/2 can soup and 1/2 can sour cream will reduce the sodium in this recipe.

Banana Cake VIII

A very nice banana cake with an interesting 'frosting'. A bit rich so next time I will sprinkle with the brown sugar-peanut mixture and then drizzle with MELTED chocolate chips. Not as messy either. I advise trying it for a change from plain old banana bread!

Big Soft Ginger Cookies

The reviews prompted me to try these in my quest for the ultimate ginger cookie....Voila! I've found it! Only change? Make them good and BIG and then TRY to have enough left to store them in an airtight container!

Easy Salmon Cakes

These will 'set up' nicely if they are refrigerated for an hour before cooking. A wonderful way to use that bit of left-over barbecued salmon after your fishing trip! Our family of 'picky' seafood eaters...love this one!
