Caramelized Turnips

I used 1 rutabaga and 1 turnip. I also made it a vegetarian dish by using vegetable boullion. This recipe is a wonderful alternative to roasting and not having to heat up the whole house.

Rice with Herbes de Provence

Good flavor. Easily made vegan with vegetable bouillon and it was pretty good. Next time I'll be trying it with different spices.

Quinoa with Sweet Potato and Mushrooms

I used 1 cup quinoa & 2 cups of water (seasoned with 1/2 packet of onion soup mix). I rinsed the quinoa before toasting. I was worried when it was done because the quinoa seemed 'goupy'. I made this recipe for work-week lunches. I ate this the next day at room temperature and it was a really good lunch with good flavor.

Microwave Caramel Popcorn

I make this pretty much every evening. I use the small 100 calorie bags of popcorn and 1 tbl. of butter. I don't wait for it to cool....I eat it hot out of the bowl!

Country Chicken Casserole

This casserole is delicious! It's creamy from the soup that baked into the hash browns and it's rich from the French-fried onions. I sautéed the chicken separately just to shorten the baking time and I also added frozen peas & carrots just to 'up' the vegetable content. I will try shredded cheese next time.
