Sour Cream Chicken Paprika

I'm really just a noobie cook so I get really excited when something new sparkles on my tongue. Or more specifically - in that special zone way in the back of my tongue where the flavor buds seem to jump for joy. This was particularly delicious - I think I was lucky and just got it right the first time.. and it gave me the chance to dip back into my (frozen) chicken stock. I added mushrooms and about a third cup of white wine, cutting back on the stock. Also thickened with a little more than 2 tablespoons of flour. Over penne. My lovely wife said this was about her very favorite of many recent recipes, and I have to agree!

Quiche Lorraine II

It WORKED!!!! My wife says that my first quiche was better than any quiche she's ever had. Don't mind saying I was worried since I can't even remember ever eating quiche before, let alone cooking it. I minced up some pancetta instead of ham and substituted a half cup of heavy cream for the second cup of milk. I worried for nothing... the texture and flavor were lovely.

Baked Homemade Macaroni and Cheese

This macc & cheese is going, going, going fast. I knew it would so I made a generous 2nd (though smaller) casserole worth which got obliterated practically right out of the oven. I had mine with Italian Style Pork Chops... sooo good!

Cheesy Chicken Pot Pie

Warm, wonderful goodness. I needed a recipe to use my chicken stock with and this popped out at me. Sadly, I didn't have any peas (how pathetic is that??) so I substituted potato, but I did have carrots and celery in the fridge. Next time I will use peas along with all the rest. mmm, so very delicious!!

Slow Cooker Salisbury Steak

I've been wanting to make this for quite a while, but couldn't find an au jus gravy packet at the grocery yesterday, so was forced to get the bottled au jus and a packet of slow cooker pot roast. I added minced onions and worcestershire. This is just a terrific dinner. Sour creamy mashed potatoes and corn finished this dish. mmmmmm!!!

Chef John's Perfect Prime Rib

Used a 7 lb. roast and directions worked perfectly. I had my kids over for Christmas dinner tonight and we couldn't be happier. I made Chef John's twice baked potatoes as well as his au jus recipes so the whole meal was fantastic.

Warm Dijon Potato Salad

Yeah, really good potato salad. I increased the amount of dijon some, otherwise stayed on recipe. I'm out of eggs and needed a potato salad for dinner tonight and I'm very glad I found this one, thanks.

Amazing Pork Chops in Cream Sauce

This sauce really is amazing. I did add a few cloves of saute garlic and a Parmesan cheese. The delicious dinner is going straight to next day lunch simply because I just can't wait any longer!!

What is not to love??? I used beef stock for liquids, butter, 2 TSP flour to thicken, and worcestershire sauce to taste. Unbelievably satisfying and delicious!

Broiled Short Ribs

We had these at Olive Garden last weekend and I decided I wanted to make my own. They cooked perfectly and were better than restaurant. Short ribs are not inexpensive, but for a special treat, well worth the investment. Crispy and sticky - these are just delicious!!

Chef John's Chicken Cacciatore

Had a hankerin' for some cacciatore tonight. I quartered a large chicken; splashed in a little white cooking wine early in the process and substituted chicken broth for water. This has that classic cacciatore flavor I was craving; delicious over angel hair with parm cheese.

Chicken Scampi II

10 STARS! My youngest daughter convinced me to try this since its her favorite Olive Garden dish. Lets just say that, thanks to this amazing recipe, she'll be dining here at my house for all her further Scampi needs ;) I breaded my chicken breast strips by sifting together flour, seasoned bread crumbs, and a half package of poultry seasoning I had sitting in my cabinet. Wow. I made more than enough for 5 teenagers, and my wife and I and still more left over. Sincere thanks for this meal; everyone loved it (over angelhair) and I end up looking like a master chef.

Homemade Tomato Basil Pasta Sauce

Oh yes!! Oh very much yes!! When I make this again I hope to have at least 3 times as many roma tomatoes from the garden (I had them ripening after picking for a couple days but still had to add two large beefsteaks.) I used half red wine / half water and thickened with both flour and parmesan cheese. This is among my very favorite pasta sauces!

Country Fried Chicken

5 star recipe - oh my, was this delicious. I stuck to the script (only swapping black pepper for red cayenne in a smaller amount) but I did the browning in canola oil with about another 45 minutes at 360F in the oven. The payoff for not much real prep time was astonishing!

I doubled the whole recipe because I knew they were going to get devoured. My batch came out so good. I dashed in a little cayenne pepper otherwise stuck to the script. Foolproof and highly recommended.

Apple Pie Filling

I wanted a nice apple filling for an Apple Coffee Cake I'm going to make this week and this is fantastic. Cortlands were not available at the market so I used Macintosh. Hard to believe a slug like me can produce a filling like this. Thank you, Terri - we'll be thinking of you when we're all enjoying our coffee cake :D
