Chicken Noodle Casserole II

This is a great casserole; very satisfying. I deep fry chicken thighs, and throw in skin and all. I have happily made this delicious casserole many times.

Chicken Stock

My chicken stock is cooling as we speak. Well this was easy as pie. I never boil chicken so I found the boning process easier than baked or deep fried. I stuck to the original recipe very closely and my wife and I agree its just about perfect. Great stock, perfect chicken meat, and by the way, the strained veggies etc is practically a meal in itself. Can't wait to use this stock in my next recipe!

Creamy Mushroom Pasta

This recipe was a chance to use my home made chicken stock. I increased the serving size and stuck with the original directions, just adding some shredded chicken meat. What a wonderful, wonderful dinner!

Fettuccini Alfredo With Sausage

I've never bought fancy cheeses from the fancy cheese bin before, but lo and behold I found a wedge Pecorino Romano right on top. I couldn't resist tasting it while shredding.. oh yeah: delicious! This was a very good recipe. In fact, its really a very new kind of flavor in my home. My wife said it had a "restaurant" quality flavor. I agree. I used rigatoni since I just made a fettuccini dinner recently, and thickened with a little corn starch. The sauce and sweet Italian sausage were perfect with one another. I increased the serving size because I knew my kids would want some next visit.

Old Italian Meat Sauce

Another fantastic recipe. I wanted to try something a little different and I'm so glad I did. Got me a bottle of red wine and got straight to work. You know, I make a pretty good home made meat sauce, but after this I don't think I can ever go back. Just WOW!!

Slow Cooker London Broil

I have to say, this has to be one of the most "addictive" sauces I've made yet. It won't let you go, so I happily give 5 stars for this easy delight. I woke around 4am and started the crockpot, finishing around 2pm. I used a flank steak which didn't quite "fall off the bone" but went beautifully with the sauce. I had whipped new potatoes (drizzled with sauce, of course) and asparagus. mmmm so good!!

Sour Cream Chicken Paprika

I'm really just a noobie cook so I get really excited when something new sparkles on my tongue. Or more specifically - in that special zone way in the back of my tongue where the flavor buds seem to jump for joy. This was particularly delicious - I think I was lucky and just got it right the first time.. and it gave me the chance to dip back into my (frozen) chicken stock. I added mushrooms and about a third cup of white wine, cutting back on the stock. Also thickened with a little more than 2 tablespoons of flour. Over penne. My lovely wife said this was about her very favorite of many recent recipes, and I have to agree!

Banana Banana Bread

I'll just join the chorus and offer my thanks for a very nice recipe. I love to make banana bread because I always seem to have all the ingredients (well, except for crushed walnuts on this occasion) ready to go. Minor tweeks only. We buttered this bread once it 'cooled' a little and gobbled it up.

Baked Homemade Macaroni and Cheese

This macc & cheese is going, going, going fast. I knew it would so I made a generous 2nd (though smaller) casserole worth which got obliterated practically right out of the oven. I had mine with Italian Style Pork Chops... sooo good!

Braised Pork Ragu

We're still swooning over this recipe. In anticipation of making this today, I went out to get some rosemary and thyme. So glad I took the time! My only tweek was a spoonful of tomato paste, and I diced up store tomatoes. I used the very last of my home made chicken stock, so I started a new stock while making this fantastic meal.

Cheesy Chicken Pot Pie

Warm, wonderful goodness. I needed a recipe to use my chicken stock with and this popped out at me. Sadly, I didn't have any peas (how pathetic is that??) so I substituted potato, but I did have carrots and celery in the fridge. Next time I will use peas along with all the rest. mmm, so very delicious!!

Slow Cooker Salisbury Steak

I've been wanting to make this for quite a while, but couldn't find an au jus gravy packet at the grocery yesterday, so was forced to get the bottled au jus and a packet of slow cooker pot roast. I added minced onions and worcestershire. This is just a terrific dinner. Sour creamy mashed potatoes and corn finished this dish. mmmmmm!!!

Stuffed Peppers

Yeah, really good potato salad. I increased the amount of dijon some, otherwise stayed on recipe. I'm out of eggs and needed a potato salad for dinner tonight and I'm very glad I found this one, thanks.
