Zucchini Souffle

This is one of those recipes that you are so happy to run into -- and yes, I tweeked it by adding minced garlic, green pepper, shredded cheddar, and cayenne pepper because I wanted something a little bolder than the original. Its the little recipe 'that could' (support so many possibilities). My daughter is RAVING about it right now . Next time I'll make it exactly the same but with the addition of kielbasa.

Cod with Italian Crumb Topping

Curried Cauliflower

This recipe saved my butt when I discovered my green beans were too old. I just happened to have everything on hand. This last minute side dish casserole was absolutely delicious... so happy I found it.

Eggs Benedict

My first attempt at Eggs Benedict was a nice success. Its one of those things where timing is a bit more strict. My eggs were just a little overcooked (half runny) due to some other distraction. Regardless, the recipe is perfect and proves that a swanky sounding egg dish can very easily be made.

Can't even describe how delicious these are. This recipe tasted just the way I had hoped for - indeed, the satisfaction quotient is absolutely off the charts. We gobbled them down!!

The Best Meatballs

I actually had a good hunk of stale Italian bread at the time I found this recipe and a half pound of ground pork left over from a Bolognese sauce a week or two ago. Love it when a great recipe like this comes together. These meatballs could and probably will become my go-to for spaghetti dinner...

Chicken Cordon Bleu II

I love to find out that I can cook something rather well... I can't imagine why I ever would have thought Cordon Bleu would be a challenge -- maybe its the French name, who knows. But this is an excellent recipe made even better by so many helpful tips & comments. I definitely doubled the sauce since I made seven - the extra sauce dribbles wonderfully over rice pilaf and broccoli. Very highly recommended.

Grilled Salmon I

So delicious for so little work. The amount of marinade was plenty enough for 2.5 pounds of salmon which all grilled wonderfully. Served with asparagus and polenta.

Butternut Mascarpone Gnocchi

Pure heaven in your mouth and fun to make, too. I had a little back up getting these morsels from the boil into the frying pan, but discovered its no hurry - everything will come together in its own time. The light toss of cayenne just makes this thing pop with flavor!! Accomplishing this recipe so successfully means a lot - I really wanted this one for my wife and it paid off... she loved it.

Gourmet Mushroom Risotto

Addictive and satisfying!! Thanks to many an aspiring chef on Hell's Kitchen I always thought risotto was impossible to make. Not so! You just have to nurse things for awhile and it seemingly does the rest. Thanks for this easy, amazing recipe!!

Mom's Portuguese Beef Stew

Wonderful stew - I'm so glad I found this. I substituted stew beef with a cubed boneless chuck roast, beef broth for water, and red wine for white. This has a delicious flavor and aroma - the sweet potato... outstanding!! I doubled the recipe which is going to give us plenty of happy leftovers. Very highly recommended.

Chef John's Macaroni and Cheese

Holy cow!! Thomas Jefferson knew how to rock some macc & cheese! This stuff is addictive. I used Keebler Club crackers instead of the Panko but otherwise followed Chef John's awesome direction.

Chicken a la King I

Someone at work mentioned Chicken a la King and I just had to make it. She gave me a recipe and it was practically identical to this one. I couldn't resist using peas in mine and mushrooms were fresh not canned. I'll always remember how this wonderful meal sustained me during the week long power outage after the NE blizzard / Feb '13.

Tasty Tender Pork Tenderloin

I had some pork tenderloin in the freezer so I decided on this recipe. The Russian Dressing, honey, onion mix sauce was fantastic; very, very delicious with pork. I opted to slow cook in the crock pot and it was just fine.

Cauliflower Supreme

I'm on a veggie tour so for my first recipe I chose this and oh boy am I glad! I steamed my head of cauliflower and used chicken stock; the whole thing thickened up nicely. My wife remained silent for awhile and I asked what she thought... oh yeah - she really, really loved it (she requested a cauliflower recipe and Cauliflower Supreme delivered!)
