Whipped Cream Cream Cheese Frosting
I have totally cheated when I ran out of time I use a container of cool whip. I took the package of cheese out and put it in my bowl with a splash of vanilla ( I used FF with both cheese and whip and it was still super delicious) then when it was call warm and soft in the bowl I add my whip a little at a time with the mixer on low. If it is really warm out add a T at a time of confectioners sugar to help it get a bit stiffer otherwise it is super good!!!!!

Chocolate Waffles I
Good but not real sweet. I ended up changing a few things due to goodies we had on hand and all I can say is wow that was an awesome dessert! First I used coconut butter instead of melted butter in a silly attempt to make them slightly healthier. Then I used the new dark chocolate cocoa powder and made a syrup with it too by adding about 1T coconut butter, 1T cocoa, 2T Agave and some water to thin. We ate ours with whipped cream coconut shreds, the chocolate syrup, and a few pecan pieces. OMG to die for! My 2.5 year old ate 2 without batting an eye. I would say it was a hit!

Chorizo and Lentil Stew
This stew is amazing. I make my own chorizo and so it is always ground chorizo. I put my Lentils in the crock pot with onion, celery, potatoes, carrots, broth/water and spices and in the evening it is an amazing tasty meal that really pleases. I would think this to be a winter meal but I tell you what doing it the crock keeps my house cool and coming home from the lake or pool it really is a great summer meal!
