Delicious Herbed Spinach and Kale Balls

I was totally overwhelmed by my farm share veggie share. I didn't want to do kale chips (again!) so was trying to find something different. I don't know how accurately I can review this because I used what I had on hand.... (scapes instead of garlic powder, scallions instead of onions, swiss chard instead of spinach. Fresh everything, nothing was frozen.) They turned out AMAZING. My husband (big meat eater) even compared them to meatballs and he loved them too. I dipped in sour cream (because I'm a big "sauce" person). If I get more kale in this week's veggie share I would certainly make again!

White Chocolate-Raspberry Cheesecake Bars

Wish I would have read the reviews before I baked it. I STRONGLY recommend warming up the preserves.. Mine looked clumpy and ugly on top of the cheesecake straight out of the jar at room temperature. The taste however was amazing, the presentation just didn't look so pretty! Had been craving cheesecake and this was so easy!

Latin-Inspired Spicy Cream Chicken Stew

Ah-mazing. Used the recommendation of other reviewers to use 8oz cream cheese but you don't need it! I used fat free (which tends to have a bit of a twang.) I didn't mind it but my bf did. If I made it again I would only use 4oz of cream cheese. I think the extra cream cheese also muted some of the spices. I like it spicy! Was concerned about an overly salty dish with the package of taco seasoning so I used no salt tomatoes and no salt black beans. Added extra cilantro at the end. Such an easy dish with lots of leftovers! I froze the leftovers but took them out within a day to eat the rest. Try it!

Tomato Zucchini Casserole

Made the recipe as is with no additional salt. I was hesitant to put in 1/4 cup of butter (so much butter!) but the Panko bread crumbs I used and the dried onion immediately soaked up everything. I blotted the tomatoes as others recommended. After I cut the first slice some liquid pooled into the empty space. I dumped it out. Despite the additional water it was very flavorful! Great use for zucchini.

Zucchini-Chocolate Chip Muffins

Made the recipe as is. It was amazing! The recipe as it's made comes out to 200 calories/muffin (mine made 14 muffins.) It was a great use for leftover zucchini. I will take the chef's suggestion and eat one every morning on the way to work! I thought it was the right amount of chocolate chips and walnuts for a healthy muffin.

Zesty Slow Cooker Chicken Barbecue

I was debating between this and a buffalo chicken slow cooker. I had a few BBQ sauces in my fridge and mixed a spicy asian BBQ and a brown sugar BBQ. I omitted the brown sugar because I had the brown sugar BBQ sauce. I cooked on high for 3 hours, shredded, and cooked on low for the last hour. The chicken was amazing and I have lots of leftovers. So simple yet amazing, thanx for sharing!

Tuna Steaks with Melon Salsa

This was amazing. I pan seared the tuna and it was just like I would love to have at a restaurant. The EVOO wasn't really necessary in the salsa. The Cantaloupe was very ripe as it was and the EVOO added unnecessary liquid. I also used a basil herb blend rather than fresh basil so that may have added to the additional liquid.

Balsamic Mushrooms

Excellent. Followed recipe as described, cooking the mushrooms a lot longer than recommended. Just a little too saucy for my liking but it was great! didn't add salt and pepper, it was flavorful as is.

Spinach Quiche

Let me first just say that "ingredients search" is an amazing feature of allrecipes.com! I came across this by trying to get rid of my spinach (and had a ton of egg and extra cheddar laying around.) I followed the recipe as stated, subbing minced onion for green onion, added a little bit of garlic, and subbed panko/Parmesan for croutons. It's what I had in my kitchen and didn't want to go to the store. It was so light and rich at the same time. It was absolutely amazing. I add hot sauce to (everything!) but didn't need it because the flavors were outstanding as it is! Thank you for sharing, bettina, we loved it!

Spinach Pesto Chicken Breasts

Loved this! I only thawed two chicken breasts but made the same amount of the pesto/spinach mixture. I also added some sundried tomatoes in an herb oil. It added a really nice flavor to it. I added the recommended parmesan cheese for 4 servings. This was so great and so easy. The flavors were amazing and it was so simple. Thanx for sharing!

Potato and Cheese Frittata

The trick is getting the hash browns right! I finally discovered the secret after countless failures. Shred the hash potatoes and squeeze all the water out. Over the heated oil, put all the hash browns in a thin layer. Cook for 7 minutes and flip to cook another 7 or 8. I'm a bad flipper so I use a plate to help. You can add anything to this! I've used the recipe as stated, added and used garlic, paprika, Parmesan cheese mixed in w/ the eggs and always add turkey sausage on top. After I do the hash browns, I move to a shallow pie dish and dump the 6 eggs over it. The recipe is amazing, you just have to know how to do the hash browns right!

Guinean Peanut Sauce with Butternut Squash

This was only ok. I had planned on making something else when I came across this recipe. I had baked the squash completely. I was unsure about how much the 2" cube should have been cooked anyway. I didn't have natural peanut butter and I used regular peanut butter. That could have made it a little on the sweet side. I combined the garlic, salt, and peanut butter sauce all together. I think I liked it more than my boyfriend did. Thanx for posting this interesting/unique recipe!

Quick and Easy Green Chile Chicken Enchilada Casserole

This went over very well for my boyfriend and his sister. I made a few slight changes: I did a dry rub of taco mix and garlic powder on the chicken. I thought the sodium from the enchilada sauce was a lot already. I mixed a the remainder of the taco mix packet with the sour cream and mixed the sour cream with the chicken, as others suggested. The flavor was great but I add hot sauce to everything so the Chalula was a great condiment to use! This was not soupy at all. In fact, I used 3x10oz cans of the enchilada sauce and all of it baked in great! I didn't char the tortillas, as I do not have a gas grill. There are tons of leftovers and they taste just as great the next day!
