Greek Chicken

I planned for this for dinner, picked up all the fresh herbs after work, but when I checked the recipe when I got home, I was so annoyed at myself for not realizing I needed to marinade overnight. I threw the oil in a bowl anyway with all the herbs, I added a good tbsp. of garlic powder, salt and pepper and dredged the chicken breasts (skin on)in the spice mix. Squeezed a little fresh lemon over top, added a sprinkle of lemon pepper, not too much. Baked at 400 for about 40 minutes, until no longer pink. Served with a Greek salad. Delish! I can just imagine how much better the flavors would be next time when I marinate overnight. Give this a try, you won't be disappointed.

Banana Waffles

Made these waffles for my daughter and I for breakfast today. We both thoroughly enjoyed them and will definitely make them again. I added a teaspoon of vanilla and cinnamon to the batter only because we both love the flavors.

Beer Batter for Fish

I had my doubts but love english style fish. Batter was way too thick. Whenever I saw the eggs in a batter, I should have known. It was cake like, I prefer a light crispy batter on my fish. Sorry.

Tomato Alfredo

I've been making this same recipe myself for several years. It's my go to super simple dinner that we all love. I use Alymers Accents tomatoes with onion and green peppers and bow tie pasta. I cook the pasta to desired consistancy, drain and add to stewing tomatoes I've just heated to a simmer. I add half and half rather than sour cream to cut the acid in the tomatoes and voila! Top with freshly grated parmesan, serve with cheezy garlic bread and you have a very economical and quick meal. I take leftovers to work the next day for lunch. If I have peppers and onions on hand I will chop up extra, saute then add the tomatoes to simmer. Allow pasta to simmer in sauce for a few minutes to absorb the flavours. Tossing occasionally as it simmers.

Orange Toast

Great twist for a simple recipe. I made this toast for brunch and we a really enjoyed it. I recalulated recipe for 4 servings and still cut the sugar to 1 1/2 tbsp. as suggested by others. It was perfect. Next time I may add a little extra zest, but it wouldn't be necessary. Will definately make again. My daughter will take this recipe off to university which is a huge compliment. Thanks for this one Helen!

Lemon Yogurt Muffins

Made these tonight because I was looking for something to have with our fruit plate dinner. I had everything on hand, ready in 20 minutes, what did I have to lose. They were delish, the glaze is a must, so easy and just put these muffins over the top. Will definately share this recipe with friends.
