Barbequed Steelhead Trout

Reviewed: Oct. 30, 2010
this has become one of our favorites. If you aren't a big Salmon lover, try steelhead trout. Much milder flavor and this is such a great recipe for it.

one of my favorites. Try with raspberry or strawberry vinegar. Wisk together until very smooth

Microwave Pralines

I cooked this for 13 minutes and it was a burnt stinky sticky mess. Had to throw it out after trying to scrap it off my bowl. Lost lots of expensive ingredients.

Megan's Granola

Reviewed: Oct. 29, 2009
this is one of my favorites. Some things I do differently. Use flax seed instead of wheat germ. I don't use sunflower seeds nor maple syrup. 20 minutes may not seem like enough time, but when it cools it is crisper. This has become a favorite breakfast cereal for us. So much healthier and less expensive than store bought granola.

Chicken Pot Pie Soup

Reviewed: Feb. 1, 2005
Had this for a cold wet January night last night. Served in a bread bowl as someone suggested and I believe it would be better without the bread. I did add some red cayenne pepper to spice it up a bit,but other than that the same. It truly does taste like a chicken pot pie without the crust.

Vodka Rigatoni

Reviewed: Jan. 25, 2005
This was very good. I used fat free half&half instead of cream. Worked well. I also did not have vodka, used Gin, instead and really couldn't taste it. I think you could probably do without if didn't have any. I did use the peas, but next time may use spinach instead. I do think this would be wonderful with shrimp. But do agree with others. Does not make 8 servings.

Cabbage Patch Stew

Reviewed: Jan. 24, 2005
This is one of our all time favorite soup recipes. If you don't care for cabbage you probably won't care for this soup though. It does have a pretty strong cabbage taste. It does freeze well also.

Creme Brulee French Toast

Reviewed: Jan. 22, 2005
This was sooo good. We loved every bite of this wonderful breakfast treat. The only thing that I added was a little cinnamon to the egg mix. Other than that I left it just like it was. Thanks for a scrumptious breakfast/brunch delight.

Slow Cooker Beef Stroganoff I

Reviewed: Jan. 19, 2005
This was excellent. Haven't had Beef Stoganoff in a long while and this was a pleasant rememberance of how good it is. I did double the sauce as others suggested. Added 1/4 cup of beef broth and 1/4 cup red wine instead of water. 1 package of french onion soup mix. I added mushrooms about 1 hour before serving. I didn't have any cream cheese so used sour cream instead. I cooked it on low for 8 or 9 hours and it was perfect.Thank you for a good comfort food on a cold January night.

Cornish Game Hens with Garlic and Rosemary

Reviewed: Jan. 17, 2005
Never having prepared Corn.Hens before, I was a little nervous how they would turn out. But this recipe was wonderful. I did double the sauce but other than that I fixed according to the recipe. The fresh rosemary is a must. They smelled the kitchen with such a wonderful aroma. I fixed UncleBen's Tomato/basil rice as a side dish along with a nice bottle of wine and it was a perfect Sat. night date (with my husband)night. Thanks for a great recipe.

Enchiladas Suizas

Reviewed: Jan. 8, 2005
This was pretty good, however, a little bland. Need to add some jalpenos. I did add a can of Rotel tomatoesw/green chilis. That did kick it up a notch! I have a King Ranch casserole that favors this. We kind of like it a little better.

Connie's Zucchini "Crab" Cakes

Reviewed: Aug. 3, 2004
As my husband said "Awesome". These were exceptionally good. Do remember to drain your zuc for a bit. They are full of water and draining and squeezing out the excess really helps make them easier to work with. You will love this recipe. And I know there is no crab in them, but you could fool me! Thanks for the recipe

Spinach Cantaloupe Salad with Mint

Reviewed: Jul. 29, 2004
This salad is wonderful and a great summer salad while cantaloupe are in full swing. I have made this twice this week. First time I made just like recipe stated except I did not use fresh mint. We loved it. I did mix all together and added the dressing right before serving. The second time I made it for a girls night out and tripled the recipe! IT was a big hit and is diffently a keeper. Everyone is amazed at the mint/apple jelly. It gives it a very nice and different taste.Try it and you'll enjoy.

Chipotle Peach Salsa with Cilantro

This is really a good salsa recipe,I made one change, however, I used fresh mango instead of the peaches. They are in season right now and are great for salsas. Try this with grilled shrimp for a great appetizer while bar-b-queing.

Baked Salmon II

Reviewed: Mar. 13, 2004
We are trying to learn to like Salmon, because it is so good for you. This dish has really helped us learn to love it! I marinated it for several hours adding to the marinade extra garlic decreasing the oil to 3 Tbls. using fresh basil, extra lemon juice and layed lemon slices on top. Grilled it for 15 minutes and turned out beautifully. I made a basic light lemon sauce put some on each plate and layed a nice piece of salmon on top. Was a gourmet meal! Thanks for a delicious way to fix Salmon.

Pasta e Fagioli II

Reviewed: Mar. 2, 2004
Excellent soup recipe. I cooked in my crock pot while I was at work and came home to a wonderful aroma. I used a can of diced tomatoes and 1 can of tomato sauce instead of the tomato juice. I also added some fresh baby spinach just a few minutes before serving for added color. Also did not have ditalini pasta (don't really know what that is) so just used small shell pasta. I don't think you need a full box either, seemed like to much pasta for our taste. Otherwise this was so very good and easy, you probably have most everything in your home.

Praline Cake

Reviewed: Mar. 2, 2004
We enjoyed this cake, however, you really need to watch the cooking time or it can become to dry. Next time I think I'll double the topping ingredients and see how it turns out. I only cooked it at 400 for 5 minutes and that seemed perfect.
