Cajun Chicken Pasta
I followed this recipe with a few suggetions from other reviewers and it was really Yummy! I definitely reccomend: #1 Add more cajun seasoning, the dish didn't taste like cajun at all. #2 brown the sausage and pepers and onion in a seperate pan before adding to poatoes, my potates got really mushy because I kept flipping/moving the skillet to get the sausage and peppers to brown/cook. 3. definitly add chicken broth to potatoes, it gave a wonderful flavor. 4.Mix a tsp of cornstarch with a little water and then add to sauce to get it to thicken up a bit. Overall, it was Really Yummy and my boyfriend and I slurped up the last drop in our bowls! Will definitley make again!

Apricot Pork Tenderloin
This is the first time I have made a pork tenderloin and it was amazing thanks to this recipe! I didn't use the honey since my Apricot Jam is homemade and already really sweet. I baked it in the oven uncovered and basted it twice during the last 15 minutes and it was juicy, tender and very flavorful. I served this with homemade mashed potatoes, stuffing and greenbeans with dinner rolls and my boyfriend and I were in heaven! This was so easy, I will be making this more often now!

Chorizo Burger
Really flavorful, a great dish to get out of the normal dinner rut. The only changes we made to the recipe was we added an egg to the beef and chorizo mixture (reviewer suggestion) and I didn't have saffron for the sauce but it was still good and we grilled the burgers for 30mins (maybe too long) because I was worried that the chorizo wasn't cooked enough but it was still moist and delicious. Make this for dinner tonight!
