Addictive Sweet Potato Burritos

The only way these could be made better would be to mix the beans and sweet potatoes before loading the burrito. As written, we got one side beans and one side potatoes. Very far from bland. I loved these.

Chopped Baked Clams

Serving size was insanely tiny. The taste was good, but the proportion of bread crumbs to clams was way off. If I were to do this again, I'd halve the bread crumbs and triple the clams. I might also make patties and bake them rather than using the ramekins.

Slow Cooker Sweet Chicken Chili

This chili was SO good. I was looking for something to make with my Black Bean Sauce that I had on hand and this fit the bill - I had everything in my kitchen except the onion and green peppers. I omitted the peppers and used some Onion! Onion! from Tastefully Simple. I doubt either of those affected the flavor much, if at all. This was a fantastic blend of savory and sweet, and my husband even asked for leftovers of it the next night.

Macaroni and Cheese with Veggie Bacon

I used real bacon and I used 1/2 cheddar and 1/2 smoked gouda like some other reviewers suggested. I almost made a half size dish since it was just for my son and me but I decided I might want leftovers so I made it full scale - that was a great decision b/c I KNOW I will want more tomorrow!

Microwave Corn on the Cob

Fantastic idea!! My son and I were having a special dinner tonight of his favorite foods and I used this to whip up two ears in record time. Thanks for sharing!! I did 6mins for 2 ears and they were perfect.

Parmesan Chicken II

The only change I make in this recipe is to use a parmesan/romano/asiago shred blend that my grocery store sells. It smells so good while it's cooking and I love the super crispy skin b/c of the cheese. This is a big hit with everyone in our family and it's so easy to throw together.
