Green Chili Casserole

Really enjoyed! Just made changes based on others' suggestions and also for fat/calorie content: used nonstick cooking spray on a 9x13" pan, used only 4 taco-sized flour tortillas, added taco seasoning packet for beef & then mixed in onions and chilis, which saves time assembling, doubled the chilis (used two 4oz cans), used only about 3c sargento shredded reduced fat mexican cheese, used campbells healthy req cream of chicken soup, and also served w/LF sour cream, tomatoes, and lettuce- fantastic! :)

Basil Shrimp

Loved this but hubby said only 3 stars - had to compromise at 4. Made a few changes - due to earlier reviews, only used 2 TB mustard (bottled dijon); subsituted half of butter as smart balance to decrease fat a bit; used one 3/4 oz(by weight) pakg of fresh basil; had to use lemon juice from plastic lemon (didn't have fresh!); and used only 1# shrimp. Served over 1 box spaghetti with reheated leftover marinade, an extra clove of garlic, extra fresh basil, and 4 fresh tomatoes, diced. Sprinkled with parm cheese and served with garlic bread. Pineapple Upside-Down Cake VII

This was my 1st time making(& eating!) a p.u.d. cake- was hubby request for his bday. I also used a 9x13 pan & it worked fine except when I turned the cake onto a cookie sheet, quite a bit was stuck to the pan- but it was still soft enough to scrape off and spread back onto the cake. This was easy to make and tasty. Will probably make it again :)

Seasoned Turkey Burgers

These were great! First time making turkey burgers-- didn't change a thing and was NOT too salty. They were moist and I even used the 99% fat free grd turkey breast. Definitely a keeper recipe! Thanks for sharing.

Cinnamon Rolls II

I was a bit disappointed with these, especially after all the rave reviews! :( But it was a lot of work and didn't think they were that spectacular. And DEFINITELY not that good reheated! I had made them ahead of time & put in fridge night before as per a previous reviewer and in the morning the filling had all leaked out around each roll. Was nice for a change but, for me, it wasn't worth it.

Slow Cooker Roast Beef

Tasty recipe but hubby wasn't crazy about it. Only cooked about 12 hours on low and was really surprised that it was on the dry side and a bit bland! (maybe b/c I used low soidium soy sauce?). However I do plan to try again and just doctor it up. (BUT- I saved all the juice and leftover meat and it made an awesome beef barley soup!!)

Whole Wheat Pancakes

Absolutely delicious and had a nice fluffy texture. For me the recipe made about 14 medium sized 4-5" pancakes. As per a previous reviewer I am anxious to try freezing them and reheating. I used the wheat germ and only used 2 cups of the buttermilk(actually had no buttermilk on hand so used 2TB vinegar and the rest skim milk). It seemed that the batter would have been too runny with that last 1/2 c. Now just have to figure out what to do about all the butter! May try substituting some applesauce for the butter next time...

Cheese Ravioli with Fresh Tomato and Artichoke Sauce

Yummy combo of flavors! I love artichokes and don't really have many ways to serve them. Only changes I made were: I used frozen raviolis, a 14oz can artichoke hearts; and because I didn't have any fresh tomatoes, 14 oz can diced italian tomatoes with ~ 1/2 c spaghetti sauce. Next time will also make sure to chop up artichoke hearts. Overall quick, simple and tasty!

Bow Ties with Sausage, Tomatoes and Cream

Very good; hubby loved- will be added to the rotation. Did make some changes though b/c as written is SO high fat and cals! Used a tomato basil chicken sausage and didn't need to cook in extra oil. Drained grease after cooked sausage; also added half a green pepper as per another reviewer; used half skim and half light cream for the sauce with just some cornstarch to thicken up; and served topped with parm cheese! Really don't miss all the extra fat! thanks for sharing!

Lemon Pepper Pasta Seafood

I make this often - it is easy and really tasty. I use shrimp and add spinach. Like other reviewers, I just use regular pasta and it still has plenty of flavor :)

Ginger Veggie Stir-Fry

Great basic for a stir-fry! I needed something superfast so just used a 16oz bag frozen "stir-fry veggies" and added 1# chicken breast. Maybe I just had too much volume, but next time will add more ginger, garlic and soy sauce. Also- you defnitely don't need so much oil. Yum!

Bread Machine Rolls

Tasty but they were heavy-- I didn't have any milk powder so following another reviewer's suggestion, I substituted milk. However, I ended up pouring the dough out of the pan! :( Next time will have to decrease the water or add more flour... or just add milk powder to my grocery list! :)

Cheryl's Spinach Cheesy Pasta Casserole

Super easy and delicious- I agree with another reviewer's recommendation: use only 1 tb of oil with rest as skim milk - you don't miss the extra oil. Used Healthy Choice garlic Lover's sauce and added about 2 tsp of basil. I baked it covered and just removed the cover for the last 5-10 min.

Linnie's Spanish Rice

Used 3 cloves fresh pressed garlic and Uncle Ben's 30-min brown rice (which actually takes about 40 min b/c more liquid with the salsa). Served in black bean burritos with cheese and sour cream! Yum!

Spinach and Strawberry Salad

Fantastic. Hubby was skeptical but ended up loving it! Used balsamic vinegar, left out the seeds and added about 1/4 of a large onion, diced. We loved it and didn't think it was too sweet.

Stuffed Shells I

Hot Artichoke and Spinach Dip II

Have made this many times and even used reduced fat cream cheese & mayo and it's fantastic. I serve it with baby carrots and pita bread chips(cut pita into wedges and lay on baking sheet and spray w/olive oil pam and sprinkle garlic salt and pepper and bake them!)-- always get raves on this one- thanks for sharing!!
