Green Chili Casserole
Really enjoyed! Just made changes based on others' suggestions and also for fat/calorie content: used nonstick cooking spray on a 9x13" pan, used only 4 taco-sized flour tortillas, added taco seasoning packet for beef & then mixed in onions and chilis, which saves time assembling, doubled the chilis (used two 4oz cans), used only about 3c sargento shredded reduced fat mexican cheese, used campbells healthy req cream of chicken soup, and also served w/LF sour cream, tomatoes, and lettuce- fantastic! :)

Basil Shrimp
Loved this but hubby said only 3 stars - had to compromise at 4. Made a few changes - due to earlier reviews, only used 2 TB mustard (bottled dijon); subsituted half of butter as smart balance to decrease fat a bit; used one 3/4 oz(by weight) pakg of fresh basil; had to use lemon juice from plastic lemon (didn't have fresh!); and used only 1# shrimp. Served over 1 box spaghetti with reheated leftover marinade, an extra clove of garlic, extra fresh basil, and 4 fresh tomatoes, diced. Sprinkled with parm cheese and served with garlic bread. Pineapple Upside-Down Cake VII
This was my 1st time making(& eating!) a p.u.d. cake- was hubby request for his bday. I also used a 9x13 pan & it worked fine except when I turned the cake onto a cookie sheet, quite a bit was stuck to the pan- but it was still soft enough to scrape off and spread back onto the cake. This was easy to make and tasty. Will probably make it again :)
