Cucumber and Tomato Salad

made this on the 4th - used feta instead of tofu and green onion instead of red (personal taste choice) everyone wanted this recipe. Thank you, delicious

I have been making this for the holidays for years. I just peel and cut up the sweet potato and layer it raw with the raw cranberries in the baking dish - add the rest of the ingrediants and bake. no need to cook the potatoes and then bake. works just fine. everyone always likes this one.

Kenulia's Carrot Casserole

must chill dough very well - and bake for the entire 10 mins. my first batch was not chilled long enough and I only baked for 8 mins. but after I adjusted, they were very good.

No Bake Lemonade Icebox Pie

Oh my goodness! I served this to guests and none of us could stop laughing (after our faces unpuckered!) do not use 1 cup of the lemonade powder. maybe 1/4 cup. the lemonade mix I used was presweetned, but this was tarter than eating a fresh lemon!

Creamy Cream Cheese Frosting

used the idea of hershey bars with almonds in frosting (but only used 2 candy bars). frosted Too Much Chocolate Cake with it (cake recipe also on this site) Rave reviews from all!!!

Too Much Chocolate Cake

made this for my son's birthday - everyone wanted the recipe. Made it in a 9x13 pan and frosted with Creamy Cream Cheese Frosting (on this site - using a suggestion for crushed hershey bars with almonds in frosting!) both recipes were the best!!!

Chocolate Eclair Dessert

Make-Ahead Mashed Potatoes

I made these for company and also added a can of fried onions - half in the mixture and baked - and before it was done, sprinkled the other half on top and finished baking. All my guests loved it.
