Bill's Blue Cheese Dressing

This is the restaurant quality blue cheese dip/dressing that I was looking for. It comes out very thick. Great for dipping with buffalo chicken or celery sticks. I cut back on the mayo after reading other reviews bc I don't like too much mayo flavor. This one is a keeper.

Fish Tacos

The white sauce alone gets 5 stars!! And for those who don't like reviews with modifications, read no further. I ALWAYS modify. I marinated and grilled mahi on the gas grill instead of frying cod. My fish marinade was lime zest plus juice, 2 pods of fresh grated garlic, salt, pepper and half a beer. We topped tacos with homemade pico (from this site) shredded cabbage, and that heavenly white sauce. Delish! I've made the white sauce twice now, the first time I substituted minced green olives since I didn't have capers, and it was great both ways! Both times, I used sour cream for yogurt, and low fat mayo, because it's what I had on hand. I also used only 1/4 tsp of cayenne, because 1 whole tsp sounded cruel and unusual. ;)

Ex-Girlfriend's Mom's Salsa Fresca (Pico de Gallo)

great recipe! proportions were nice. i like mine heavy on the cilantro, so i added a little extra. we've already made this three times since finding the recipe only a month ago.

Mardi Gras King Cake

Pleasantly surprised!! I knew I was going to use my bread machine, so I halved the recipe, so that it would fit. I didn't use raisins in the filling. I love raisins, but they have NO place in a king cake. :) The filling was really good, but it was a bit much. If you're from South Louisiana, like me, and want a traditional cinnamon king cake, I would suggest using a mix of 1/3 c white sugar and 1 T. cinnamon (or 2/3 c sugar and 2 T. cinnamon if you make the full recipe). And to me, king cake icing is equally, if not MORE important than the dough, so I am SO thankful to the reviewers who suggested using lemon juice to hide that funky taste that you get in powdered sugar. I loved this icing recipe from one reviewer: 2 c. powdered sugar, 1 T. butter melted, 1 t. clear vanilla, 1 t. lemon juice, 3 T. milk (plus add extra milk as needed to get to the right consistency.) It was PERFECT king cake icing. The full recipe, will make 2 regular-size king cakes, which could serve 20-30, depending on how you slice it.

Easy Chicken Tetrazzini

Not a bad base recipe but definitely needs some tweaking! After reading other reviews, I boiled the chicken in water seasoned w/salt, pepper, onion and garlic powder, then boiled the pasta in the same water, then used some of that water in the recipe. I added sauteed onions and quartered mushrooms, and more salt/pepper/onion/garlic powder when mixing up the sauce. And, c'mon folks...only 1/4 cup of cheese?? How bout 3 or 4 cups!! ;)

Caramel Popcorn

Excellent, easy recipe! Makes the perfect sweet, crunchy, flavorful snack. I followed exactly and it came out perfect. As it baked in the oven, the caramel kept getting crunchier and crunchier.

Best Ever Popcorn Balls

Great recipe with one easy modification: use butter flavored popcorn (I used light butter bagged popcorn) because it gives great flavor. If you use plain popped, it will be very bland. These were chewy, sweet, and delicious, just like I remembered them from my childhood! The simplicity of the recipe allows the popcorn flavor to shine. Adding other flavors like vanilla would take away from that.

Capers and Halibut

Excellent recipe! Easy to make, very few ingredients, and great results. My husband and I are not usually caper fans, but he raved over this one. Even my 3 and 5 year old kids liked it. Highly recommend!

Honey-Pecan Chicken Breasts

Loved it - Simple to make (except pounding chicken breasts is never fun), and great flavor. Heat from the cayenne pairs nicely with the honey. I followed other raters' suggestion to remove chicken from pan, THEN add honey and pecans and cook a few minutes longer.

Crescent Dogs

Nice, easy dinner for families with kids. I wish the cheese wouldn't melt off as much, so I always try to stretch the crescent roll to cover as much of the hot dog and cheese as possible. Also, when I followed this recipe, the dough came out a bit underbaked on the bottom, so next time I will bake a little longer.

Green Bean Artichoke Casserole

Very good recipe, but it was very rich. I reduced bread crumbs and added some artichoke brine based on comments from others. After making those changes, I think next time I will use a little less cheese. I love a cheesy dish, but I would have preferred for the veggies to shine through a little more. Will definitely make this again!

Easiest Peanut Butter Fudge

Very good for a quick and easy fudge recipe! It was obviously not as good as the real thing, but it was a LOT less work too. This was delicious, and my family loved every last bite. Make sure you wrap it up well after you make, because it dries out very quickly, and gets hard and crumbly within a few days.

Beignets

Another review from a south Louisiana native who knows what a beignet should taste like. This recipe was pretty good, but not the same as cafe du monde in NOLA nor the cajun village in Sorrento. With that in mind, it wasn't worth all the effort. I guess if I'm desperate for beignets, I might make it again someday, but it took at least 2 hours, maybe more, to make dough, roll it out, and then deep fry. Not to mention additional time for kitchen clean up (children + powdered sugar = total mess). Way too much time for me to invest in a recipe that falls short of the real thing. Also, I fried in canola oil, because that was all I had on hand, and I suspect that had something to do with the lack luster results. Vegetable oil probably would give a better taste.

Cheese Ball I

Loved this recipe - very flavorful. My husband hit it every day until all leftovers were gone. :) I added shredded cheddar/jack, since I had it on hand. I also used more than 1/2 c of Parmesan, but it was hard to estimate how much, because I was grating by hand. I substituted green onions, as I didn't have chives on hand. Will definitely keep this recipe!

White Bean 'n' Ham Soup

Nice easy soup recipe. I preferred using chicken broth, for more flavor, and also added garlic, celery seed, and hot sauce based on my family's preferences. The serving size was NOT correct, as this only yielded about 4 servings. (But we ate this soup as our main dish, with a side salad) Next time I will double the recipe.

Bread Machine Rolls

Excellent recipe! Very easy to make in the bread machine. My husband and kids devoured them, and then requested that I make them again with our Thanksgiving dinner. Thanks for an easy, delicious dinner roll recipe!
