Crispy Fish Fillets

One Bowl Chocolate Cake III

Love it! I like to scatter chocolate chips over the top before baking, and ice with a cooled ganache (cream and chocolate). This cake is definitely better the next day or after freezing and defrosting.

Marrakesh Vegetable Curry

OK, I'm impressed. I don't usually like sweet main dishes, but I tried this because I had the ingredients available and the reviews were good, and I am very glad I did! I subbed regular potato for the sweet, cauliflower instead of green pepper (cauliflower is a must in curries for me) and since I didn't have turmeric I just used more curry powder (plus extra). I only put a small pinch of cayenne. Oh, and I forgot the spinach. This seems like a very flexible dish to me, and it was yummy.

Sage Pork Chops

I thought this was a really great recipe for pork chops. My only changes were not using any salt for the rub (and it was still salty from the bouillon), and adding a little flour to the rubbing process. I don't like the taste of cornstarch and I figured this would thicken the sauce just enough, which it did. (I boiled down the sauce for a few minutes after removing the chops.)

Fancy Chicken Salad

I used chicken breasts that had been baked with hot sauce, so I'm sure that had an impact, but I thought this salad was WONDERFUL. I used 1 T dried dill instead of the fresh, and I only let the flavours meld for about 10 minutes at room temperature.

Whole Wheat and Honey Pizza Dough

Wonderful recipe. You'd never know it was healthy! I've found that if I heat a glass of water for a minute in the microwave, the microwave becomes a great place (warm and humid) to stash the dough for rising.

Rhubarb Cake I

I love this recipe, although I always make it with at least half whole wheat flour. (I find that whole wheat flour does well in heavy, fruity cakes.) Yesterday I switched cranberries (3 cups) for the rhubarb, and brown sugar (a quarter cup less) for the white sugar, and it was delicious too.

Crispy Rhubarb Pie

Last night I made it for the second time (added a heart-cut strawberry on top of the crust for Valentines). This time I used bran flakes because that's what I had in the house. It was still very good (more like a crisp though), but having tried the cornflakes the first time, I know that the cornflakes are MUCH better!

Cream of Pumpkin Curry Soup

I didn't think I liked pumpkin soup, but I LOVED this. My husband, who was very negative at the idea of pumpkin soup, ate 4 bowls. My 3 year old, who didn't even want to taste, asked for a bowl for herself, once I put a few drops in her mouth. We used 2 cups of our own pumpkin puree, and since I wasn't too sure about the quantities meant by 3 bouillon cubes, I used two cubes (each of the cubes I use would normally make 2 cups of bouillon). We used half 35percent cream and half 2percent milk, but I think I could reduce the cream content without a problem. It didn't need the sour cream or chives in my opinion.

Garlic Herb Grilled Pork Tenderloin

Super attractive presentation (cut into medallions after cooking)and great flavour. We doubled up on the garlic and herbs. It only took about 1/2 hour to cook so we did find that we didn't actually want to eat the filling - it flavoured the meat well but was still uncooked itself! I was really happy to find a savoury rather than sweet recipe for pork.

Carrot Cake III

I love this cake every time I make it and have gotten tons of compliments, but as usual I changed the recipe according to reviews! I use only 1/2 cup oil but 5 cups of carrots to keep the moisture (works great and much better for you!). No pecans (I don't like nuts in cakes). For 1 cup of the all-purpose flour I substitute whole wheat flour. For 1 cup of the white sugar I use brown sugar instead. And to up the flavor I use 3 teaspoons of vanilla and 3 teaspoons of cinnamon. Mostly I don't ice the cake but when I do I use the Whipped Cream - Cream Cheese Frosting from this site. I love to make it in two round or square pans and freeze one for emergencies.

Basic Microwave Risotto

OK so it isn't as good as the risotto you spend 45 minutes stirring on the stove. But for the amount of effort, it really is excellent. For the record, I forgot to heat the chicken broth once, but I added extra liquid and cooked it longer, and it turned out fine.

Alyson's Broccoli Salad

I used red grapes instead of raisins, red wine vinegar instead of white, green instead of red onions, toasted pine nuts instead of sunflower seeds. I reduced the sugar to 1T and did blanch the broccoli per some reviewers. I was surprised at how good this was! I'm not one for mixing sweet and savoury, but this was popular even with my 10 month old son.

Eggplant -- Easy, Good and Tasty

Pesto Lasagna

An amazingly decadent vegetarian recipe. I used only about half the quantity of ricotta - and actually used cottage cheese instead. I had a bigger jar of Alfredo and used all of it for moisture. I also used more spinach than called for. Got lots of praise for this one and enjoyed the leftovers too.
