Hearty Breakfast Muffins

Fantastic! I thought I'd venture from my breakfast cookie and make some muffins and came across this recipe. I used coconut oil instead of vegetable and instead of yogurt, cottage cheese. I used a small zucchini. The only nuts I had around was "Almond Meal" from Trader Joes (which is almonds ground to a fine powder), I put in a whole cup to add protein, and I also threw in 1/2 cup of ground flax. These are SO delicious, and the consistency is PERFECT. I cooked mine for 20 minutes. Thanks, Katie! I'm going to try your Kale salad next. Keep posting ;-)

Lemon Chicken Orzo Soup

This is one of the best soups I've ever made. Fantastic! I was a little worried about how much lemon juice was in it (was concerned it would be sour), but it was delicious, and the combination of parmesan cheese, with the lemon juice is incredible. The only thing I would change is that it was awfully thick, and I ended up adding more chicken broth. Definitely a keeper.

Kale Puttanesca

I've never bought anchovies before in my life and wasn't sure if I'd like them or not, so this was a new experience. I threw them in the food processor to hide them from my kids, though. I followed the recipe exactly and it was fantastic. My kids gobbled it up! Thanks for sharing!

Slow Cooker French Onion Soup

Fantastic! This is the best one I've tried yet (I'm experimenting with different recipes of FO Soup). Really, really, good. Next time I may do cheese slices rather than the grated cheese, though.

Chicken Tinola

This was fantastic! We loved the broth. It's simple but very flavorful and easy to make. Next time I try it I'll use less chicken (it was a lot of chicken), and maybe add potatoes or some sort of rice or grain.

Butter Bean Burgers

I've made these twice now and they are hands down the best vegetarian burgers I've found. They hold together very well, and are delicious. Instead of Saltines I used Triskets because that's what we had around the house and I figured they were a healthier option. I added an extra jalepeno the second time - they give it a great flavor. I hoped for a little kick, but they weren't spicy at all. My daughter requested these after I made them the first time!

7-Layer Meatless Tortilla Pie

I've made this twice now and my family has raved! I added a layer of baby spinich leaves the first time, and the second time I sauteed some shredded zucchini and onions to mix with pinto beans. I think you could do whatever you wanted to it and it would come out delicious and it's VERY easy.

Mike's Homemade Pizza

I have to say I have never made this crust - but I'd give the sauce 10 stars if I could! It's better than any pizza restaurant. You'll never buy sauce again. I make huge batches and freeze smaller quantities (ice cube tray works best) to thaw out whenever you want pizza. Just keep some mozzerella on hand and make a pizza on french bread, tortilla, english muffin - with whatever you have in the fridge. It's perfect to have around when my kids have friends over. I've made batches of this pizza sauce for gifts for people and passed this recipe along to the many people who have asked me for "my" sauce recipe. Don't be afraid of putting that much red pepper in - it's a perfect kick to the sauce, but not actually hot. Perfect combination of flavors! Thanks for posting ;-)

Vegetarian Baked Pasta

Wish I could give this 6 stars. Yum! I thought it was fine with the amount of gorgonzola the recipe called for - though it was super cheesey. I might cut back on the mozzerella next time. I sauteed some onions, fresh spinach and thinly sliced carrots with the portabellos, and I had fresh oregano and basil in my garden. Oh SO delicious. Even better the next day for leftovers.

Asian Ginger Dressing

This is a keeper for sure! I made it in my little food processor/blender, and blending the fresh ginger and garlic with the rest of ingredients made it almost creamy! I cut the unused remainder of my peeled fresh ginger into chunks to freeze for my next batch. As others suggested I did use 1/2 cup olive oil and 1/4 cup sesame oil. I thought the soy sauce and honey were perfect, so that may just be a matter of preference. My kids were asking to pour it on their broccoli last night, so it's not just for salads. Thanks for this tasty recipe!

Healthy Garden Salad

I have no idea why this is so good. I actually put off making it for a while because I was a little skeptical of the reviews. Afterall, it's just a salad. No -it's not. It's REALLY, REALLY good. The simple dressing is fantastic. My kids wanted more (?!). I followed th recipe, but threw in some brown rice that was left over from the night before, and added some shredded romaine and served it as a meal (rather than a side). Great recipe. Thanks for sharing!

Homemade Black Bean Veggie Burgers

These were okay, everyone ate them and no one complained.... but not the best. I would definitely choose them over a frozen processed meatless burger though for sure. I felt like they just needed something else to make them fantastic.....
