Oven Fried Chicken Wings

Moist, but dull. I cooked about 3-5 longer on a side because my pan was VERY full. Chicken was moist, but largely flavorless. DH thought we should have rolled in garlic-parm mix after baking (we also omitted the bread crumbs).

Crispy Catfish

Whole family loved it! Made a few changes - used garlic powder to reduce sodium and subbed low fat panko for the saltines. I baked it in a 350 oven for about 25 minutes. This one is a keeper - the butter adds fat (and Flavor!) but I suspect less fat than frying the catfish would have.

Healthier Amazing Pork Tenderloin in the Slow Cooker

This was incredibly tender, but had almost no flavor. It was nearly as bland as baby food and no one in my house would eat it. I ate leftovers by myself for a week with a variety of sauces to give it some flavor.
