Easy Iced Coffee

I have had this every day instead of the traditional drip coffee for months now. I love it. All I do is put 2 teaspoons of Nescafe, 2 teaspoons of sugar, and I turn on the tap to hot and just eye the water--it's probably like 1/4 of a cup, or less. Then fill the cup with ice and pour milk over it. Very basic but very good if you're a coffee fan!

Chocolate Mint Cookies I

Holy cow, these are good. I did as another suggested and just added Andes pieces in after the dry ingredients. Really, really yummy.

Peach Muffins

These are just so good. My family loves them. I add a bit of milk to make the batter more moist. I cut the recipe in half and it makes 12 regular size and 12 mini muffins! More than enough. :)

Six Can Chicken Tortilla Soup

This was great (and cheap, which is my favorite part). I cut up raw chicken tenderloins, put them in a crockpot, poured two tablespoons of melted butter over it, seasoned with cumin, chili powder, and garlic powder, set the crockpot on low and let it cook for about 5 and a half hours. Took the lid off, broke up the chicken pieces and poured the rest of the ingredients in, only I used a can of cream of chicken soup in place of one of the broth cans, and I rinsed the beans and corn together in a strainer. I also added more of the spices mentioned above. I used tortilla strips on top (that you can buy on the salad dressing aisle). Wonderful!

Carrot Cupcakes with White Chocolate Cream Cheese Icing

I made this for dessert on Easter :) They were delicious. The icing was so rich. I might use a little less orange extract next time.

Slow Cooker Chicken Stroganoff

I love this stuff. I use 1/3 less fat cream cheese, half the packet of seasoning (which has plenty of seasoning to me, and that way I can use the same packet next time), and add a little jar of mushrooms. Yum!

Pizza Casserole

Great recipe--but I don't know who thought this could be 6-8 servings. I was very disappointed, as I was making this for my family of five and there was barely enough for four. Maybe for 7 children, but not 5 adults. I guess I should've looked harder at the recipe instead of assuming the amount of servings was correct.

Best Chocolate Chip Cookies

Favorite chocolate chip cookie recipe! I have made these several times and they always come out soo good. I don't know what makes them so much better than other recipes I've tried...maybe dissolving the baking soda? That's all I can figure. I guess don't skip that step! My boyfriend thinks he's the luckiest guy to have a girl that makes cookies like these. :)

Mashed Potato Quesadilla

I LOVE these. I don't use salsa with them, just sour cream. It tastes more like a baked potato that way. One thing I do differently is just use one tortilla. Just butter one side of a tortilla, put it in the pan and hold it open, then spread the ingredients inside and fold the tortilla over. It makes it less calories and is actually a lot easier to flip in my opinion. Also, the ingredients don't fall out as easily. Great recipe--yummy and easy :)
