Creamy Carrot With Curry Soup

Reviewed: May 2, 2014
I thought it was awesome. I made a few changes based on dietary restrictions and preferences but pretty much stuck to the recipe. I added a cored, diced apple. I used coconut oil instead of butter. I also left out the sugar and used whole milk rather than half and half. Next time I would love to use light coconut milk. Nothing like the coconut curry combo. Thanks for the great recipe, as I too was looking for something more than a light summery carrot soup.

Sloppy Joes II

Reviewed: Dec. 16, 2013
Totally delish and quick. My kids devoured these. I didn't want to use ketchup as a base so I used 1 cup of plain spaghetti sauce, a bit of rice vinegar, a little extra mustard and brown sugar. They came out amazing! Serve with a salad and dinner is done. Thank you!

Yogurt Chicken

Reviewed: Mar. 13, 2011
It was delicious. The kids enjoy when I make "nuggets" by cutting the chicken into chunks before. I used a pretzel crust as we like that extra crunch and bit of salty. Just throw them in the food processer to get a fine mix. I used greek yogurt and added a little garlic extra lemon to the mix for some extra tang. Yummmm.

Curried Butternut Squash and Pear Soup

Reviewed: Feb. 28, 2011
Wonderful and quick. I used pre cubed squash from the store to save time. I also did not have pears or apples on hand so I stirred in some cinnamon applesauce to taste. I did not have onions, either (can you tell I hate the grocery store?), so I used shallots. I left out the half and half to save calories. This incredible soup was still creamy and delicious!
