Slow Cooker Chicken Gumbo with Shrimp

Reviewed: Nov. 18, 2014
Very tasty! I was looking for a way to prepare chicken thighs that was new and exciting and this fit the bill. I had 1/2 of a kielbasa sausage in the fridge so I threw that in as well. We really enjoyed this. :) I didn't cut the thighs up because I knew I would have to leave this in the slow cooker for 8 hours and I was hoping to not dry out the chicken. I was able to shred it with a wooden spoon and it wasn't dry at all.

Easy Lasagna I

Reviewed: Nov. 8, 2014
LOVED it. I didn't use the cottage cheese at all though. Also, the pan I used was too big but it still worked out. I took another reviewers advice and added some water to the pasta sauce to add more moisture and stretch the sauce. I also added 1 small can of tomato sauce. I might add in another pound of hamburger next time too but it was great as is. I just like it extra beefy.

Dutch Babies II

I made it exactly as written except I used a regular non-stick skillet instead of cast iron. Turned out 'delish!' according to the people who ate them.

Very good. I had it with a pork loin roast with roasted potatoes and carrots. It was a very nice addition.

Bombay Chicken Wings

I loved this! I didn't have soy sauce so I used Ponzu. (A citrus like soy sauce) Also, my curry powder was super spicy and I was making this for someone who wasn't as keen on spice as I am so I used a non spicy curry paste and then a few dashes of the curry powder.

I really enjoyed this! I served it with a cheesy scalloped potato dish and some spinach and it went over quite well. :)

Morning Glory Muffins I

I liked these a lot, but family members weren't thrilled about the amount 'stuff' vs. the amount of batter. If I make this again I will cut down on the 'stuff'.

Idahoan Mexican Casserole

Reviewed: Feb. 16, 2014
I loved this! I didn't have any instant potatoes so I used real mashed potatoes instead. (I know... the nerve when the recipe came from Idahoan! I promise to buy a box of Idahoan next time I shop though :P) edit: I bought the Idahoan mini microwave cups... so I have redeemed myself!

Sesame Beef

I used Ponzu in place of soy sauce because somehow I am out of soy sauce. I used 1 Tblspoon of splenda instead of the sugar and followed the directions other than that. I didn't double the marinade and I loved it as is. I served over Jasmine rice with snap peas.

Tuna-Cado

Reviewed: Feb. 5, 2014
This is my new midnight snack! Sometimes I add a tad bit of mayo to the tuna though :D Also, sometimes I eat this with tortilla chips. But sometimes I just eat it as is. I really want to experiment more with this recipe by adding spices to olive oil and then mixing that in with tuna packed in water. Not a huge fan of the IDEA of packed in vegetable oil although the taste was great. Anyway, thanks for this new idea! edit: My new favorite way to eat this is by mixing in a *few* chipotle peppers in adobo sauce with the tuna.

Extreme Chocolate Cake

Reviewed: Feb. 3, 2014
This was pretty good but just not 5 stars in my opinion. It seemed a tad dry for what I was expecting to be a super moist cake. If I try it again I will pull it out of the oven sooner and see if that helps.

Baked Chicken Wings

Reviewed: Jan. 28, 2014
What I liked about the recipe is that I was able to make a "normal" type chicken wing for my mom who isn't a fan of the buffalo style wing. And then I added Franks hot sauce to mine after it was done. I did try the non Franks version and it was good, but sort of plain for my tastes. Still a solid recipe that looked beautiful when it was done.

Favorite Old Fashioned Gingerbread

Reviewed: Jan. 25, 2014
Cooking time is way off. Luckily someone said to check it at 40 minutes... I suggest checking it at 30-35 because my oven always takes longer than most ovens and it was perfect at 40 minutes, so your oven will probably cook it faster. I STILL rate this as 5 stars because it was exactly what I was looking for. I followed the recipe exactly except cooking time. Most people will probably want more spice but this was perfect for me. Handy note to those who realize they only have frozen butter: Cut the butter into small pieces and it is ready in 15-20 minutes.
