Awesome and Easy Creamy Corn Casserole

This is one of several recipes for corn casserole that I have made and it is my absolute favorite. The souffle type texture really makes it delish to me. I added a small amount of shredded cheese to the batter just because I love cheese in almost everything. Next time I will saute some chopped green onion in the butter before mixing. (Another personal choice of mine.) Will serve well for my church fellowship lunches too. Thanks for the recipe!

Fried Chicken with Creamy Gravy

This recipe makes delicious fried chicken!! My husband (who is a steak man) declared after eating the boneless, chicken breasts I prepared last night, that it was better than the two famous Fried Chicken fast food places we have around here! I very rarely "fry chicken", but after his reaction, I guess once a month won't kill us.LOL I followed the recipe exactly with the exception of adding onion powder to the spices. My personal preference. I make pretty good cream gravy, but never used chicken broth before. I will make it this way from now on. Thank you so much for the recipe!

Zesty Slow Cooker Chicken Barbecue

I prepared this for our Memorial Day meal. Followed recipe exactly using Splenda Brown Sugar and Sweet Baby Ray's BBQ Sauce. I overcooked the chicken just a tad (some of the pieces were dry in the middle)which I will adjust next time. The oil from the Italian salad dressing did not mix with other ingredients completely and wonder if I should reduce the amount a little. All in all, we enjoyed the chicken barbecue, especially the flavor of the sauce. LOVED IT. Will be preparing this again. Thanks for the recipe.

Mom's Best Macaroni Salad

My husband and I really liked this salad. I did leave out the sugar and 1/2 can of the condensed milk was just right to me. I added some cheese crumbles and later, to increase liquid, added some regular milk. It is definitely better the next day. Not something I will make to often due to the sugar content, but will be great for our monthly church dinners and family get togethers. Thanks so much for the recipe.

Country Apple Dumplings

I have one of the few husbands around that does not really care for apple pie. When he tasted these dumplings, he became an apple lover. Said I can make these anytime. Since he is diabetic, I did use both white and brown sugar Splenda. Will try diet 7-Up next time to cut sugar further. Added a little apple pie spice and nutmeg to the syrup. Scattered chopped pecans on top and think I will put these in the syrup next time. Give it five stars from my husband and me!!

Clove Bundt Cake

Maybe the fact that I used Splenda instead of regular sugar contributed to this cake being a complete disaster. Not sure, but after I paid almost $8.00 for a can of ground cloves, I had to throw this cake in the trash. It was dry,dry all the way to the center and did not rise at all. I wondered about the batter when I mixed it. It was so gummy it stuck to the beaters and would not pour into the pan. Oh well, after 50 years of cooking, I can have a failure once in awhile. May try again and use sugar but have not decided about that.

Sara's Pumpkin Pie

One of my favorite pies is pumpkin. I made two pies for church fellowship yesterday and among one of the comments was "that my pumpkin pie was outstanding!" Can't get any better than that. Great recipe!

Sweet Pasta Salad

I made this as a side for my birthday dinner. I really liked it and will make it again (but not too often, too much sugar content). Cut the recipe in half because it was only my husband and I. Omitted the sugar, can't imagine adding that on top of sweetened condensed milk! It was plenty sweet, maybe a bit too much for some. Used fat free milk and Miracle Whip not mayo. Also added some shredded cheddar cheese. Will try it for my church luncheon one of these days. Good if you want to fall off the "diet wagon" once in awhile! LOL

Juicy Roasted Chicken

We loved this recipe for roasted chicken. I didn't change anything except using butter instead of margarine. We don't eat margarine, only smart balance. Next time I will try that. The skin was crispy and nicely browned, discarded this, since neither my husband nor I ever eat it. The meat itself was extremely moist, white and dark. One chicken, three adults, only one leg/thigh section left. Mine for lunch today! My steak loving husband had two helpings. Very rare for him and chicken. Thanks so much for the recipe.

Fresh Strawberry Upside Down Cake

I made this cake for "my Mother's Day" dessert and it was wonderful! Since it was for a special occasion and the first time I tried the recipe, I did not try to turn it out of the pan. Nervous it wouldn't come out right. lol Just chilled it and cut it and we topped it with aerosol can whipping cream. YUMMY! Will be making this cake many more times for special meals, since this family does not need the calories or sugar. Thanks so much for the great recipe!

Coconut Cream Meringue Pie

After 48 years of cooking, I made my first coconut cream pie for my husband's birthday this week since it is one of his favorite kinds of pie. I made two and they both turned out perfect and I got lots of rave reviews from both husband and family. Yummy taste and no problem with being "runny". Did take a little extra effort, so it will be one of those special occasion desserts. We don't need all that sugar very often anyway.LOL Thanks so much for the recipe!

Slow Cooker Sausage with Sauce

Love crockpot cooking and the less ingredients the better. So this dish fit right in. We loved it!! I had to use two rings of polish sausages, no Italian sausages sold here. Mixed in large jar of Ragu Robusto ( chopped tomatoes, olive oil, and garlic flavor) with the bell pepper and onion. Served with brown rice and mixed vegetables. Family thought it was a great meal! Thanks for sharing the recipe. One change I think I will try next time is to cook the sausage ahead and drain to cut down on the amount of grease consumed.

Double Chocolate Pie

I made this pie for my birthday this week. I love chocolate any way, so this pie hit the spot! After being chilled throughly, it cut perfectly. It looked like the pie in the picture. I topped it with canned whipped cream. I may try adding meringue next time. It does have a ton of sugar and I will only make it for special occasions, but I will make it again.

Bacon, Potato, and Egg Taco Ole

In South Texas, these taquitos (ta-key-toes) are a regular breakfast for the majority of the folks. You can make your own or buy them at DQ or dozens of other eateries in different meat/cheese/vegie combos in flour tortillas. This looks like a great recipe from a fellow Texan and I intend to try it. Sorry DQ, once in a while I have to cook breakfast for me and the old coot. LOL Thanks for the posting!

Baked Teriyaki Chicken

Prepared this while dressing for church yesterday. Delicious easy lunch with brown rice and broccoli/cauliflower mix. Liked because: 1. Easy to prepare 2. Simple ingredients and not too many of those. 3.Taste yummy. My favorite kind of recipe since I have been cooking almost 50 years, I don't want to work too hard. lol I always try to follow a recipe the first time as written after reading the reviews. If I don't have all the ingredients, I go to the grocery and get them. Pet peeve: people who leave out or change half of the ingredients and then say how bad it was! I did use wht/Splenda brn sugar, 1 tsp garlic powder instead of fresh. Cooked at 375, covered for 30 min., turned the meat and uncovered and cooked for about 15 min. more. The sauce was like a thick pancake syrup, which I really liked. Will try chicken breasts and maybe add a little crushed pineapple to the sauce next time.

Pretty Chicken Marinade

My husband (not a chicken eating kinda of guy) and I both LOVED this. I never substitute ingredients when making a recipe for the first time. I go to the grocery and buy anything I don't have. Any substitutions probably change the recipe that was submitted, right? Sooo, prepared just as written and grilled on our outside gas grill by hubby, turned out delicious, Chili's restaurant type chicken. He even said THREE times, (the "I really don't like chicken guy"), this is really good!Update: prepared this again and used the 2 tbsp of mustard (used less the first time) and it was alot saltier than the first time I prepared it. Makes me wonder if the "too salty" complaints may have been caused by the amount of mustard than the low sodium soy sauce. ?? Will add only 1 tbsp. from now on.

Garlic Red Potatoes

Prepared this just as written, using my own judgement as to when the potatoes were tender. I do not use butter (cholesterol), using Smart Balance instead. Removed foil at end and cooked a few minutes more until beginning to brown a little. Added some grated cheese after removing from oven and let it melt. Hubby and I thought they were very good.

Preacher's Delight

Tastes better after being refrigerated overnight. I was disapppointed though that the sauce never thickened and the cake was "floating" in it in the pan. Was hoping for a pudding type consistency here. I bought Cool Whip to use for the frosting but we ended up just adding it to individual servings. This cake is VERY VERY sweet and to me, doesn't really need the added sugar. Some of the family didn't want it at all..

Filet Mignon with Rich Balsamic Glaze

My hubby and I loved our filet mignon steaks prepared this way. Delicious ! A little tweaking by me is needed for "sauce" to turn into glaze consistency since it was very thin. Nevertheless, the taste was great and I used the excess to pour over the veggies on my plate ! LOL Will prepare this time and time again.
