About this Cook
I am a mom of 4 and wife to a husband who loves my cooking! I think the most important job a Domestic Goddess can have is to put a lovely dinner on the table each night so that the family can sit, talk, and eat together! Happy memories are my goal....and good food is the vehicle that gets us there!
My favorite things to cook
I love to bake! I am famous for my chocolate cake and peanut brittle. I make sourdough most weeks for the family and scones every Sunday.
My favorite family cooking traditions
I love American Comfort Food, Irish cooking, mexican for parties! Every year the whole family frosts over a hundred of my Great-Grandma's sugar cookies for Christmas in bright, festive colors!
My cooking triumphs
I made Ratatouille just like in the Disney movie and it was SPECTACULAR! It took all day with the slicing and layering, but it was the most impressive little plate of food in front of each of the kids and they actually ATE all the veges!
My cooking tragedies
I will never forget the turkey that didn't defrost properly for Christmas Eve Dinner. Just like in a bad movie! We ate all of the side dishes instead. That and the lemon chicken in the crockpot that I added too much lemon to...it was disgusting! I thought the recipe looked suspicious and should have trusted my gut instincts!

Chicken Chimichangas with Sour Cream Sauce
I don't often leave a recipe as is, but I tried this one just as the author said and it turned out perfectly! The next time we made them I didn't want to get the fryer out on a weeknight, so I made them as enchiladas with the sauce on the top. They were a little bit soggy, but they still tasted delicious! I think the key if you want to make them is to make the filling a day ahead and reduce the liquid down to almost nothing so that they have all of the flavor without the mess. Love this recipe!

Black Bean and Corn Salad II
Best thing to take to a party hands down! Have made it twice and it is always a hit.
