Pumpkin Nut Muffins

I reduced the amount of white sugar to 3/4 c. and could not tell any difference. These are great muffins, very moist. They freeze well, too.

Quinoa Veggie Salad with Zesty Vinaigrette

Great way to use quinoa. I cut the recipe in half, but only used half of the quinoa. Next time, if I cut the recipe in half, I will use 1 c. quinoa and 1 c. water, cooking it for 15 min. I also added some blanched, chopped fresh broccoli.

Cinnamon Ice Cream

The cinnamon flavor of this ice cream was delicious. I served it with apple turnovers and everyone loved it. The only drawback for me is that this is a very rich dessert and I usually prefer something much lighter. A little bit goes a long way.

BETTER FOR YOU OATMEAL RAISIN COOKIES

I made another batch of these and used 3 T water, and substituted dried blueberries (soaked in water to soften) for the raisins. Delicious!

Spicy Cucumber Soup

I doubled the recipe without doubling the spices and it will still pretty HOT! I had to add extra broth and milk, so decided to add some whole wheat angel hair pasta (broken up), and it turned out pretty good. Not sure I would make it again, but it was interesting, for sure.

Healthy Garden Salad

Great taste, easy to make ahead and very good as leftover. I used olive oil in the dressing and added a little crumbled feta cheese. I took it to a party and everyone loved it!

Broiled Lobster Tails

Simple and delicious. I split the shell down the middle with kitchen shears and pulled the shell halves apart to expose the meat, but still leaving it inside the shell. I used the 2nd rack from the top and broiled for about 10-11 minutes and it was perfect.

Butternut Squash with Onions and Pecans

This was my first experience with butternut squash and I served it at a family buffet supper. It was tasty, but I think a new flavor for most of my deep-south family and went over so-so. Everyone thought it was sweet potatoes before they tasted it.
