White Chocolate Cheesecake with White Chocolate Brandy Sauce

This is an excellent recipe! I used raspberry flavoring in the ganache in place of the brandy but that's the only change I made. Highly recommended!

Cool Whipped Frosting

This is a very good, quick frosting. However, I like it even better with homemade whipped heavy cream. You can do so much as far as flavoring. It's great to use flavored coffee creamer in place of the milk and/or any kind of pudding you want. Endless possibilities. I agree with the review that said if you don't like Cool Whip and pudding for your frosting, there are many others to choose from without those ingredients. Enjoy :)

Pastry Cream

This is an excellent recipe. I used all of the ingredients but changed it around a bit. I always put all of the dry ingredients as well as the milk & butter in the sauce pan & thoroughly combined. I never use whole eggs when making pastry cream. I used 4 yolks & lightly whisked them and set them aside. In the sauce pan, I cook on medium or slightly hotter then medium until the mixture comes to a boil. I move the mixture off of the heat and "temper" the eggs by taking a ladle of the hot mixture and drizzling it into the yolks slowly while quickly whisking the two together. Then I whisk the egg mixture back into the pan and bring to a boil until thickened. Transfer it to a bowl if you wish for it to cool then put a piece of plastic wrap over the bowl but put it right down on top of the cream so it does not form a "skin". Air will cause a skin to form. If this happens, whisk it or use electric beaters to fluff it before use. For a richer cream, use half & half or heavy cream instead of the milk. If you do, it will most likely thicken quickly. I will continue to use this recipe.

Cut-Out Cookies in a Flower Pot

I've made A LOT of sugar cookies in the time I've been baking but this is the best recipe to date! I halved the recipe and they came out great! I didn't have much time to decorate them but what I did do for decorating was fun! Look no further for a cut out sugar cookie recipe! EDIT: I have continued to make these cookies, the original recipe is GREAT! Sometimes I add a bit of almond extract -1/2 tsp in addition to the others (YUM)! I've made them with & without the cookie sticks, both ways were enjoyable! I find when I leave the dough in the refrigerator for a coupe of days, it works best for me. I kneed the dough a few times to loosen it up. I don't use flour for rolling it out, I use powdered sugar. Seriously, look no further for THE BEST cut out sugar cookies!

Grandma's Lemon Meringue Pie

Hi, I made this pie with the 12 serving calculation because I made a deep dish pie. It said to juice & zest 3 lemons, I used 4. It had 2 1/4 cups of water, I used less then 2 cups of water and a bit more then 1/4 cup of lemon juice. I ended up putting an extra T of sugar... It was great! The only thing I will change (it calls for 6 eggs with 12 servings), I will use the 6 yolks but 9 or 10 whites for the meringue. I decorated the top with marshmallow bunnies & malted milk ball "eggs" for Easter, SO CUTE! Great recipe! Don't hesitate to use this wonderful recipe! Happy Baking:)

Beth's Spicy Oatmeal Raisin Cookies

Hi, although I think this is a 5 star recipe on it's own (without a doubt) I DID change a couple of things... I used all butter, 1 1/4 cup brown sugar & 1/4 cup of white sugar. The only thing I would change next time I bake these (and there WILL be a next time) I will add more cinnamon. I found that the last couple of batches I cooked had more body to them. The next time, I will let the dough set on the counter for 30 to 45 minutes before baking. I made these about golf ball size on the cookie sheet & cooked them for about 17 to 19 minutes. I let them set on the cookie sheet for about 3 minutes before removing them. Using parchment paper makes removal so easy! I made 28 cookies at this size. This is THE BEST oatmeal raisin cookie recipe! They came out with just a little bit of crustiness on top and soft & chewy inside - yummmmm! I compared it to the one on the Quaker oatmeal container & the ingredients are mostly the same but the measurements/amounts are different. That changes te end result! Plus the addition of the cloves is a great touch. Don't hesitate to make these cookies!

German Chocolate Birthday Cake

Hi, I rated 3 stars for the cake itself but the frosting is more like 10 stars! I have a better German Chocolate Cake recipe but this is the frosting that I will use from now on! I toasted the pecans & coconut just a bit & oh my, wonderful!

Grandma's Banana Bread

Great recipe! However, I changed things to make it a bit healthier. I used 1 cup of brown sugar & 1.5 cups of Splenda. I used 2 cups of whole wheat flour & 1.5 cups of AP flour. Instead if 1 cup of butter, I figured 2 bananas were about the same consistency of 2 sticks of softened butter - 1.5 tsp vanilla and fat free buttermilk. I stirred in (gently) the dry ingredients alternately with the buttermilk. I usually use eggbeaters but I was out. I added the 6 bananas (total of 8). I made it in a bundt pan & had enough left over for a mini loaf pan. AWESOME!! I will be making this regularly!

Just a warning...don't put regular food coloring in melted chocolate or candy coating, it will seize/clump up. Use gel or an oil based coloring. Have fun!

Caribbean Zucchini Bread

This is a great, healthy recipe! LOVED IT!! I changed some things to what I had on hand. I used 2 C of whole wheat flour, 1/2 C almond flour & 1/2 C ground flax seed. Added an extra banana, instead of oil I added 1/2 C drained crushed pineapple, more of the 'caribbean' flair... and in addition to the vanilla extract, I added 1/2 tsp almond extract. I had to bake a bit longer then called for but with any recipe cook it until the tooth pick comes out clean. Great flavor! Will be making again & again!

I was looking at this recipe & read the reviews. If theres not enough of a coffee flavor, substitute the water in the recipe with coffee. Thats what I'm going to try. Happy baking :)

Mocha Chocolate Chip Banana Muffins

I loved these muffins! I did make some changes. Nothing wrong with the original, I just like certain things (smile). I put i cup of packed brown sugar and 2/3 cup of splenda. Used egg beaters in place of egg. I also used 3 tbsp of instant coffee & instead of mixing with water, I mixed it with 3 tbsp of coffee. I also added 1 more banana. Very moist! Mmmmm, LOVE THEM! Strawberry Cheesecake Muffins

These did not work out for me.... I'm a pretty good baker (quoting others) & I barely had enough batter to put a bottom layer for 12 muffins. The measurements seem way off! I ended up using 8 oz of cream cheese & for the topping I combined brown sugar, cinnamon, nutmeg, quick oats & butter. They came out O. K.... However I won't be making them again. I'm glad many others are happy with the recipe. I wish I could have given a better review.

Almond Butter

This recipe was a good base but it was way too dry! I used one cup of dry roasted almonds, 4 tbsp of extra virgin olive oil & 3 tsp of honey. It tastes very good and is spreadable. Thanks for posting :)

Amaretto Divine

Great recipe! I couldn't find amaretto creamer so I used almond toffee. Very good! I also used french vanilla pudding. Put double dipped chocolate covered strawberries on top with the chocolate drizzle. I made it for my best friend's Birthday. Very impressive cake. Make it without hesitation :)
