Mexican Rice I

This is much easier and less expensive than my usual recipe. My husband even commmented that it was really good and asked if it was a box mix!

Easy Mexican Rice

This was excellent, everyone loved it! My husband has eaten it for 3 days straight now and is still raving about it. I used all of the recommendations by the last reviewer, NADROJ451. I used instant brown rice which meant I was done with dinner in about 15 minutes! We've never had black beans before, or a meal without meat for that matter so I was pleasantly surprised! This looks very appealing and is very filling. This moves to the front of my recipe book!

Alice Chicken

This was delicious, my favorite chicken recipe now! Taste and presentation is perfect for guests or special evenings! This really gives the chicken a different taste. It was difficult finding the honey mustard sauce ... I got the last bottle in the store, and couldn't find it at all at other stores.

Tacos in Pasta Shells

I cooked this recipe as is. It easy to prepare and didn't take long to clean up. Everyone ate this meal but all went overboard on the sour cream and salsa because there wasn't much flavor. We eat a lot of Mexican & spicy foods and expected some flavor which this did not have. I didn't really like the cruncy tortilla chips, they were distracting. The taste just doesn't justify the high calories/choloestrol, etc. in this recipe for me.

Beezie's Black Bean Soup

I used the ingredients as listed and was pleased by the flavor. I chose not to puree as I prefer it chunky. This took me about 10 hours to cook, the rice definitely needs more than 20 minutes. I think I will cut back on the black beans next time, there was a spoonful in ever scoop. The soup reminds me a little of chili due to the flavor and texture. I served this as a meal with homemade jalapeno cheese bread (corn bread with the leftovers). This makes enough to feed an army!

Lana's Sweet and Sour Meatballs

This makes 8 servings so was enough for 2 full meals for us. I made 2 cups of white rice to serve it with. I substituted an extra green pepper for the carrots since I didn't have any. Beautiful in color and texture. This has never happend before, but my 2 year old came back for seconds...both nights! I don't like traditional meatballs, but enjoyed these. My husband commented that it was the best sweet/sour sauce that I've made so far. I was worried there wasn't going to be enough sauce, but it was plenty. Quick and tasty, can't wait to make again!

This tasted great, and we liked it even better the next day. I made exactly as described and won't be changing anything next time. I served peas on the side. It passed the 2-year-old test. Can you get any easier or less expensive than this!?

Inside Out Ravioli II

We really enjoyed this, we've been eating on it all week and I'm freezing the rest today (a pound makes quite a bit!). I think this will be as good as the sauce you use for it. I'd recommend a traditional thick sauce. I made the sauce myself to get the taste I wanted. The recipe says to reserve 2 cups of sauce for the top which we thought was odd at the time but soon realized it was a good idea because it prevents the pasta from absorbing the sauce so much. My husband said, "This is great! You've really outdone yourself this time." Both of my children enjoyed it and didn't even know they were eating spinach! This tastes a lot like ravioli (which is great because I'm never ever going to stuff little pieces of pasta!) Simple ingredients -- nice change from traditonal pasta dishes.

Best Italian Sausage Soup

I made this exactly as the recipe says, except for the pasta. I broke into bite size pieces before boiling, and stored separately. I added the pasta per bowl when reheating because we like pasta firm and "unsoaked" and smaller pieces make it easier to eat at work. This was extremely tasty, the kids liked it too. I can't wait to make this for guests, it's very elegant with little effort. I think I will use spicy/hot sausage next time.

Easy Mashed Potato and Roasted Vegetable Enchiladas

Funny how everyone was complaining when I was cooking because it didn't have meat, but everyone was fighting over the left overs. Even my 2 year old ate it all. I was so hesitant that they wouldn't eat this, that I made a backup dinner just incase but certainly didn't need it. I followed the recipe exactly as described and wouldn't change a thing next time. It took a long time to prepare the vegetables but everything else went quickly. It would have been a breeze if I had a food processor! I liked the mashed potatoes in it the best. They didn't taste like enchiladas to me (they weren't dripping in grease), but they made a tasty vegetable wrap!

Hawaii Chicken

We're more of a "chicken breast" family so this was really different for us. I have never cut up a whole chicken and spent a lot of time restling with it. I thought the sauce was definitely missing something, maybe ginger? I doubled everything but the chicken so we'd have penty of sauce which was exactly enough for the 4 of us. Everyone liked it especially my 2-year-old who had 4 servings (loves pineapple!). I served with brown rice on the side.

Zuppa Toscana

Everyone including 2-year-old loved this! We had to make 2 pots because we ate the first one up and didn't have any left overs for lunch. Our adjustments for the second pot was boiling the kale with the potatoes, reducing the chicken bouillon to 2 tsp, 1 extra cup of water, and a pinch of crushed red pepper. Can't wait until lunch tomorrow!

Jack's Chocolate Chip Cookies

I used only used 2 cups of chocolate chips since that's all there was in the bag which was more than enough chocolate anyway. I substitued raisins for the nuts due to allergies. These came out very flat, crunchy, and brittle (I prefer fat chewy ones). I could not remove them from the cookie sheet until they were cooled. I greased the next batch made larger balls, and waited for them to cool for 5 minutes which worked much better. I didn't like them at all, but the kids cleared the plate without complaining. Better them than me anyway.

Oven Roasted Potatoes

So easy and smells so good cooking! I used the ingredients listed but didn't peel the potatoes. I chose to put them in a glass casserole dish so they would come out soft (not crip) to conform to blend better with my meal. Everyone loved these, and my 2-year-old ate every bite. Thanks for this great recipe, it will replace my traditional pan fried recipe!

Aunt Millie's Broccoli Casserole

Everyone ate their broccoli! No on in our family likes brocoli, but they'll eat anything that is covered and smothered I guess. I used 2 heads of broccoli because that's all I had, will use 2 next time too because it was very moist. I used cheddar cheese and added 2 Tbls milk.

Easy Teriyaki Chops

Extremely simple with lots of flavor! I marinated thin slices of pork for 2 hours and pan fried. Not too salty like some recipes we've had.

Caramel Popcorn

I love carmel corn, have tried all different recipes but this one is my favorite. I bake mine in a roasting pan. This stores a long time in an airtight container.
