Banana Oat Muffins

I like how large these muffins come out. The oats give it a bit more texture but the taste remains nearly the same. My 3 kids thought they were fantastic. The only substitution I made was half wheat flour. These were much better than the weight watcher version I tried the day before.

Tuna and Noodles

This is really great for how simple it is. I used Kraft Velveeta Light Shells and Cheese and cooked according to package. I microwaved my package of broccoli, cauliflower, a carrots frozen mix. Then mixed all 3 together. I will add chestnuts next time for some crunch. This made a great lunch and didn't taste so much like a traditional tuna casserole.

Florentine Stuffed Chicken

I only had 2 chicken breasts so I modified this to stretch further. I seasoned the chicken, cut into strips, and baked. I boiled some egg noodles. I microwaved the spinach. I sauted the onion with a teaspoon of minced garlic. I added 1 chopped tomato and mixed all together. I sprinkled more cheese on top and baked until warm. It was very good, all 3 of my kids had seconds and we still had left overs. I think the mix would be great stuffing for pasta shells.

Salsafied Chicken and Rice

This was a hit! Everyone had seconds and requested for lunch the next day. I used 1 cup rice and 1 can of black beans. I doubled the salsa (I used black bean and corn salsa) and halved the chicken broth since I prepared the rice separately. I served with the little round Tostitos tortilla chips and sour cream on the side so it was almost like dip. The rice and beans were fantastic, next time I won't even add chicken. This made 8 filling servings for us and tasted just as good the next day.

Flank Steak With Horseradish Sauce

This was a good marinade and a flavorful dip. I made exactly as stated except I broiled it in the oven. Makes ordinary meat seem a little more special. I served this with one of my all-time favorites, Horseradish Potatoes which can also found on this site.

Pork Chop Suey

All of us really enjoyed this recipe and can't wait to make it again. I loved it the way it was but it would be easy to alter with what you have on hand. I served with chinese noodles.

Blueberry Muffins II

I can only recommend this recipe if you're going to make 6 rather than 12 muffins. I made two batches following the recipe exactly. The first batch of 12 were very dry and stubby. The second batch I filled the cups to make 6 and they were much better. They were not like the cake-like muffins like out of the box. They were more of a biscuit texture.

Asian Beef with Snow Peas

I should have known better than to use round steak. Very tough. I marinated the meat for 2 hours in the sauce which helped with the flavor. Very easy and quick but we won't making again.

BBQ Teriyaki Pork Kabobs

I made this exactly as stated and was pretty good. The marinade was the best part, it had good flavor and was tender, hte chili peppper did give it a small kick. The sauce was a little bland and I had just enough sauce to cover the kabobs with nothing left to baste them with which was ok because it was already seasoned with marinade. Most of the sauce cooked off leaving moist kabobs lightly flavored. I broiled the skewers in the oven and microwaved red potatoes, both were done in just 10 minutes.

Black Bean Enchiladas

Very easy to make and everyone like it. A very generous serving size so we didn't have a side dish. I used regular thick salsa. Next time I will give it a spicy kick.

Horseradish Potatoes

This was a great change to potatoes and very simple to make. Not sure if they were to be cut, I left them whole and cut at the end which saved me some trouble. Hint of flavor, not overpowering. Tastes a lot better than it sounds!

Banana Muffins II

I have been making these twice a week because everyone enjoys them so much. Sometimes I make them for breakfast, sometimes for dessert in the evening. The muffin is the perfect size for the kids plus travels well for lunch.

Cranberry BBQ Chicken

This one is a keeper for us! Very tasty and sticks well to the chicken. A lot of flavor and the left overs are just as good. I cover with aluminum foil so they don't dry out.

Marinara Sauce I

This is a great sauce particularly becacuse it's not runny. I used mine for meatloaf sandwiches so I was looking for somehting thick. The extra freezes well and complements bread sticks or cheese sticks.
