Chicken Cordon Bleu II

This was a FABULOUS recipe! My boyfriend loves chicken cordon bleu sandwiches, so I thought I would make the real thing for him. He and I both loved it! It was a little hard to roll the chicken, ham and cheese up. I think next time I will have to flatten the chicken out more. Otherwise it was delicious!!!!

Cranberry Stuffed Turkey Breasts

I made this turkey for my new in-laws and they just loved it! My mother-in-law liked it so much she asked for the recipe. The combination of the turkey, stuffing, and cranberries all together was delicious. I would have to say that I had way too much stuffing and cranberries compared to turkey. And it was kind of challenging to get it all wrapped up. It would have been nice to have an extra set of hands to help tie the rolled up breasts.

Pork Medallions with Balsamic Vinegar and Capers

I made this for my fiance and we both loved it. I did have to cook the pork longer than suggested to make sure it was done. But the combination of the balsamic vinegar and the capers made for a delicious sauce. I served it all over mashed potatoes which as a nice compliment.

Butternut Squash Soup II

This soup was pretty tasty, but mine came out a little thick, almost like baby food consistency. Next time I will add more chicken broth. Also the flavor of the potato seemed to stand out so next time I will probably cut the potato amount in half.

Chicken Florentine Casserole

This was a pretty good recipe, but I wish it would have told you to serve it with something like rice or pasta. I am now reading other reviews that tell you to do that and I agree that would have made it better. Also I didn't care for the Italian seasoning, it seemed to overwhelming.

Raspberry and Almond Shortbread Thumbprints

These are really good, with some great almond flavor. The cookie dough is really easy to make, the hardest part is getting the raspberry preserves in the middle of the cookie. Also I doubled the icing recipe because I didn't think there was enough on the top of the cookies.

Zucchini Patties

These were really tasty, but really messy to make. I squeezed out as much water as I could and they were still sloppy to form. Also by adding so much cheese and frying them you kind of ruin the nutritional factor of the vegetable.

I really love this granola recipe. I make it all the time for breakfast. I don't add the chocolate, but it's still very sweet. And I like having the peanut butter in there for some added protein.

Individual Beef Wellingtons

My husband and I made this dish when my parents came to visit. We just loved it. We had made the traditional style beef wellington before and that was so huge and seems to take a ton of time to prepare. We liked this because it was simplier and you ended up getting more puff pastry with your meat which is really yummy. The only substitution that I made was using beef loin instead of tenderloin. The ternderloin was really expensive so I went down a step in meat quality.

Merritt's Butternut Squash Gratin

I was a little sceptical of this dish before I made it. But I wanted to make a butternut squash dish that wasn't so sweet, more savory. Well this dish was perfect! I don't know if it was the herbs or what, but it almost tasted like I was eatting stuffing. It was so good! I followed the recipe except for I used less gruyere cheese than it called for. So good!

Cranberry Pumpkin Muffins

This is a great recipe! The combination of the pumpkin and the cranberries was delicious. I made these for work and everyone loved them, they were very moist and didn't crumble apart like a regular muffin.

I have made these cookies several times and they are FABULOUS!!!! My friends and family just love them and constantly ask me for the recipe. They are soft and stay soft which I love. The best cookies ever!

Jumbo Shells with Asparagus, Prosciutto, Ricotta Cheese and Three Cheese Sauce

I made this recipe and it turned out pretty well. I made 12 oz of jumbo shells and this was way too much to fit into a 9 x 13 pan. I think around 8 oz would have been perfect. I also didn't have that much prosciutto so I added in some Jennie-O Turkey Store Italian ground turkey. I thought that was a good addition and it balanced well with the cheeses and sauce.

Garlic Crab Artichoke Dip

I love this recipe! I have made is a few times and it's always a hit. I followed other reviewers advice and I swapped out the mayo and replaced it with cream cheese. Also I don't use canned crab meat, I use the imitation flake kind and that gives it a much better crab taste. Delicious!

Sweet and Spicy Pork and Napa Cabbage Stir-Fry with Spicy Noodles

I made this dish and thought it was delicious. It's felt fresh because all the veggies but yet it was spicy from the sweet chili sauce. I also used fresh ginger because I think that adds a lot of flavor.
