Rempel Family Meatloaf

I love this recipe...super yummy. My changes were that I only used 1 pound of lean ground beef and then finely shredded yellow zucchini (squeezed out) to it to make up for the meat. My kids asked what it was and I told them it was shredded cheese (couldnt do that with green though). also, I used whole wheat Ritz. Yummy...now my go to meatloaf recipe.

Tortilla Casserole

This was so yummy! I brought it to MOPS this morning and got a few compliments. I used red onion instead of green onion and I added Jimmy Dean reduced fat cheese. It's hearty enough to serve for dinner too.

Chicken Kiev

My mother used to make this when I was a little girl and we always loved it. I made this for her birthday dinner this year and it was awesome. I made these changes though: *used tarragon instead of chives (so yummy) *added 2 tsp of minced garlic to butter *after rolling, I refrigerated them overnight and they set real well. When I was ready to cook them, I put them on a wire rack on a baking sheet and sprayed them with cooking spray. Then baked them at 375 for 30 minutes. It was awesome...so yummy. And they didn't leak! I rolled them into logs like someone else suggested and also placed them seam side up. Only problem was how to flatten the chicken without tearing it.

Asian Orange Chicken

I thought the flavor was awesome...definetly restaraunt quality. But not the texture...could be because my pan was too small. I think the cornstarch ration was too sticky, also. I like the idea of adding sesame oil to the sauce...that would make it perfect.

Egg and Cheese Puffs

I made these for a ladies church breakfast and they tasted really good. I completely forgot all the butter (I'm not even blond!) but it still came out tasting and looking pretty good. No one noticed. They are really good for a brunch dish. The chiles tasted good too, but I think it would be better with a sausage instead of bacon.

Roast Sticky Chicken-Rotisserie Style

This was awesome! It really does taste like the supermarket chickens. It was so tender, moist and flavorful. My husband and I devoured it. I did two chickens so I could use the second chicken for pot pie and soup.

Ham and Cheese Breakfast Casserole

This recipe was very good and easy to do. I made it for a baby shower and it went over pretty well. I used all Swiss cheese (I think...I can't remember). After it was done, it had to set a little, so don't immediately try to eat it.

The Best Rolled Sugar Cookies

These are awesome! They taste just like cookies by design. I ordered some really cute cookie cutters from www.foosecookiecutters.com and used this recipe. It's just sweet enough. If it were any sweeter and you iced them, it would be way too sweet.

Yummy Couscous Salad

This was a really yummy recipe. I used FF ranch dressing and FF yogurt. I also used whole wheat couscous from Trader Joe's and cooked it without the butter. Everyone at dinner loved it.
